  • Invest in making some of Delia's Chilli Jam...and just add that to your plate as a sauce.

  • Fried rice with a mild curry or savoury rice.

    I also had forever ago rice balls but I don't remember the recipe or what was in them :o

    How about fragranced rice like jasmine etc mind you not sure what you could accompany it with.

    Rice and peas with mango chicken.

    Jar of mango chutney
    zest and juice of 2 lemons
    skinless chicken breasts
    4 tblsp oil
    1 onion-chopped
    2 cloves garlic
    200g long grain rice
    400g kidney beans- drained and washed
    500ml veg stock
    1 thyme sprig-leaves stripped
    175g petis pois (peas are fine)
    200ml coconut milk

    Heat 2 tblsp oil in pan. Fry onion for 5 min. Add garlic, then stir in rice. Cook for a min. Add beans, pour in stock and coconut milk, season well. Bring to boil, cover and simmer for 25-30 min or until rice cooked. Add thyme and petis pois for last 3 min, fluff with a fork.

    Mean while mix the mango chutney, lime zest and juice and remaining oil, season well. Heat griddle pan and brush some mix over chicken breasts. Cook on each side until charred and cooked through. Once done, set aside to rest a little and heat rest of chutney mix in pan.

    Dish up rice and peas, set chicken on top, drizzle sauce over or serve in little pots on the side for people to dip their chicken in.

    If the weather is warm enough rice salad is good (just remember to cool the rice quickly once cooked). Like to chuck crispy bacon on top of ours just before serving. This is also handy as a lunch option.

    Risotto is another good one to do. You can bung in veg that needs using up or chicken or bacon.

    I recently discovered risotto. I shove all sorts of things in mine. Frozen peas are a good source of 'green' if you are a bit short of healthy looking veg to go in it.

    I often make "stroganoff" with left over meat from a roast. I add the gravy to the chopped up meat and add a tin of condensed mushroom soup. This is lovely served with rice.
    Also if you make spicy food following recipes for the spices you can just leave out the cayenne, chilli powder or ginger and you will be left with taste but no heat (if it is the HOT spiciness they do not like!)

    How about an omelette - say with peppers, bacon, mushrooms (anything you like).

    Egg fried rice can be a meal in itself, with say a pancake roll. Fry some diced onions or spring onions, pour in some beaten egg, let it almost turn into an omelette then break it up and add the rice.
