    I have a recipe which asks for 'Easy Cook Basmati Rice'

    Do I have to use that? It's so expensive!!!

    Although Basmati Rice is expensive too...!

    Can't I just use normal Rice?????

    Basically I am doing a 1 pot Spanish rice dish and I add peppers, onions, chorizo, tomatoes and stock... and cook... throw in prawns at the end!!!

    I only steam rice as I can't cook it to save my life.. and I am very worried this recipe will come out like stodge!

    Please HELP!

    chorizo and prawns aren't cheap, and you're worrying about the rice?:rotfl:

    I realise that, but it's for a birthday pressent and the chritzo and prawns are £3.50, add 'Easy Cook Batsmati' and it's £5.00!

    When I have normal rice at home.

    I want something special for my husband but it has to come out of the weekly shop :(

    But I do see the irony!!!

    add some LEE KUM KEE premium oyster sauce to basic rice and you'll not be disappointed

    I am cooking a fajita salad for my dins tonight. The recipe wants me to use an Uncle B's ready cooked rice microwavable jobber, i don't like them and don't see the need to buy it when i have rice in my cupboard.

    So you lovely people. How do i flavour my rice to make it more interesting? (recipe wanted a pepper one? )

    I currently cook my rice using the 'Jamie Oliver' method of boiling it for 5 mins then steaming.

    Any advice would be much appreciated.:beer:

  • I usually boil my rice with a veg or chicken stock cube crumbled into the water, then while it's cooking, I soften chopped mushrooms,onions and peppers frying pan,sometimes add a shake of chilli powder or paprika, then add the cooked rice and cook for a few minutes more, yummy

    Sometimes I boil my rice in stock instead of water -and throw in a few frozen peas or chickpeas towards the end. Just use twice the volume of liquid to rice, bring to the boil and then turn the heat right down, cover and simmer for around 10 mins until it boils dry. Leave it to steam then for around 5 mins and it becomes nice and fluffy.

    Another recipe I sometimes use as an accompaniment to a curry or on its own:

    1 chopped onion
    1 cup rice (I use around 2/3 of a mug either for 2 adults & 2 children)
    2 tsp medium curry paste (vary to taste! - if I don't have paste I use powder and then mix in 1 clove crushed garlic and 1 thumb grated ginger)
    Chickpeas or peas
    Chicken or veg stock (2x volume of rice)
    Cashew nuts (or whatever you've got - I use flake almonds a lot)
    1 tablespoon butter (or oil if you prefer)
    Natural Yoghurt to finish

    Melt the butter in a big frying pan with a lid and add the onion. Gently fry for around 5 minutes until translucent then add the curry paste. Mix and then add the rice. Stir fry for a minute or so and then add the stock.
    Bring to the boil, turn down the heat then leave to simmer until most of the stock has been absorbed. Add the peas/chickpeas and continue simmering until the rice is cooked and the stock has been absorbed. Stir in the nuts and swirl in a spoon of yoghurt if you like.

    Any leftovers are great for lunch the next day!

    i tend to cook the rice in vegetables, so fry off, onion, garlic, pepper, courgette, whatever you're having, then put the rice in, toss that around in the oil a bit, then add your usual water, so it all cooks together.

    you can make a curried rice that way by using curry powder in the cooking water and garlic and ginger fried off first

    i saw a nice recipe the other day for cous cous but you could adapt it for rice, mix the cooked rice with lots of chopped parsley, coriander and mint, with feta cheese and black olives, with a sort of oil and lemon juice dressing, i think that would go with fajitas

    I like to fry off onions and then add rice coat it in the oil then add vegetable stock. I like to add peas and broccoli into it.

    You can add anything in you fancy it to vary it.
