I use basmati rice and cook it by volume - one measure of rice to two measures of water. Bring to the boil, simmer for a few minutes and then leave with the lid on for 10 mins ( no peeping!)
For extra flavour I use a stock cube, some tumeric or various curry powders. You could also sweat some finely chopped onion and other veg before adding your rice to the pan to make your own vegetable rice. I used to buy the packets of savoury rice but I find they have a rank artificial taste now that I am used to my own home made stuff.0 -

Do you reckon it would work with normal 'long grain' rice?
sounds tasty, much more so than the bland stodge I have had in the past!
I don't see why it wouldn't work, I often use basmati when it says long grain rice (I usually only have mixed grain, risotto and white basmati in stock, no plain "long grain"
as long as its not the really quick cook stuff should be ok, was very tasty and leftovers yum0 -
Lakeland do a really useful rice cooker, just put in rice (I agree that Basmati is good, but Basmati with wild rice even better) and cover with boiling water. Microwave for around 10 minutes depending on amount of rice, then lift insert off the water. For summer barbecues I put peas etc on top and cook with it, then drain and mix in curry paste and mayonnaise while it's still hot. Makes a really good rice salad. Roll on summer!0

I always use basmati rice from ALdi, seems to be cheaper there, but I cook it in the microwave. I just put a big mugful of rice to feed four of us in a plastic bowl then a mug and half of water. I don't stir or cover then put it in the microwave on high for about 14 mins (750w) about 12 mins (850w). Just stir with a fork when cooked. Perfect rise every single time. fave rice recipe......
fry chopped onion and any leftover veg bits(courgette/green beans/peas/peppers etc)
add however much rice you need and stir together for a minute
add a tin of chopped tomatoes plus the empty tin of water
add squirt of tom puree, chili/garlic/salt/pepper to taste
pour into an ovenproof lasagna style dish and gently stir in one tin of tuna steak (try not to break it up too much)
cover with foil and cook on high for 10 mins
remove foil(check it's not cooking dry and add more water as needed)sprinkle over a breadcrumb cheese mixture and cook uncovered until rice soft and topping crispy...
once mastered it can be made and cooked from start to finish in less than 30 mins...i eat as is with a dollop of onion mayo0 -
Has anyone got any rice and veg and meat complete meal dishes? I don't mean rissotto unless they are easy and don't involve constant stirring.
Mt kids do like Risi e Bisi (rice, ham and peas) and fried rice is a favourite (although on a diet, so not at the mo) does anyone know any like the Uncle Ben's adverts0 -
You can cook risotto in the oven, which does away with all the stirring - I just brown the meat / veg (or whatever flavouring I'm using) add the rice, add the stock, then put it all in the oven until it's cooked. It tends to be a bit softer than risotto cooked on the hob, but it's still very nice, and much simpler to make.
If your kids like spicy food you could do a sort-of biriani - I do it in much the same way as my oven baked risotto, but with long grain / basmati rice and the addition of a blob of curry paste. It's not remotely authentic, of course, but rather tasty all the same!Back after a very long break!0 -

I have a recipe which asks for 'Easy Cook Basmati Rice'

Basically I am doing a 1 pot Spanish rice dish and I add peppers, onions, chorizo, tomatoes and stock... and cook... throw in prawns at the end!!!
I only steam rice as I can't cook it to save my life.. and I am very worried this recipe will come out like stodge!
