    I've blown my diet today as have stuffed my face with chocolate..feeling a bit calmer now so will put it down to a bad day and start tomorrow.

    oh risotto is really easy - we have it every other week - especially if we've had roast chicken at the weekend!

    Souk, if you are buying arbrorio rice it usually tells you on the back how much stock/rice to use, dead easy just keep stirring - like Surfbabe we often have chicken risotto using up leftovers with some bacon and peas chucked in and it's yummy:D.

    Bacon and peas were already in my plans! Great minds and all that. Just been round to my mates to check on it while their on hols and there was some old Paremesan in his fridge that will be out of date by next week when they get back...so I pinched it for my risotto. Yippee!!!

    I love risotto! Souk, just be patient with it, and keep stirring, adding the stock little by little. And if the first attempt doesn't work, try again - it is worth persevering as it is really easy and delish once you get the hang of it.

    If you don't have parmesan etc, stir through a bit of low fat philly or something similar - yum yum yum!

    I've had a soak in the bath, so feel all relaxed and pampered too :D

    MMM..theres an idea...think i have some arborio rice in the cupboard..will bear that in mind..am doing roasted veg and couscous within the next couple of days as well...

    I love risotto too and use Jamie's recipe, can't remember which book it's in - one of the earlier ones, but I think most of his recipes are online for free now anyway :money:
