  • Wraps are good. You can stuff them full of filling so that the carb content is relatively low compared to the entire meal.

    Crispy lettuce,with cold meats, cheese, tomatoes, cucumber, fried chicken strips in all flavors, chili beans, chili saus, sour cream etc.. in all combinations possible.

    Soup and a chunk of hearty bread?

    Homemade soup with bread, roll or crackers
    Toasties
    Oatcakes with pate, humous or cottage cheese
    Wholemeal pitta with salad and cheese or cold meat, humous etc
    Veg sticks, carrot, cucumber, celery, pepper, cherry toms, radish with guacamole dip or salsa.
    individial pizza, the dough can be made in advance and frozen.
    Jacket potato with Cheese, beans, coleslaw, tuna, chilli, the list is endless really.
    A nice mixed salad with some tuna and hard boiled egg.

    spanish omlette - filled with whatever veg, mushrooms, cheese etc to hand. easy to pack up to take to work with a small tuppeware container of salad or fresh fruit.

    To take to work, although I do load food into tubs so some things like cous cous or pasta salads are fine.

    A good way to bulk out a soup is to add cheap white rice and blend it into the soup. It thickens it much better than flour and tastes better too!

    Quiches are great. The shortcrust pastry can be made for a few pence and fillings are endless! You can have bacon and peas, mozzarella and sliced tomato, cheese and onion, cheese and broccoli...

    Courgette "noodles" apparently work quite well - grate courgettes and boil in stock to make a base for a noodle dish instead of egg noodles.

    How about bulking out evening meals like spag Bol and chilli with beans, onions and carrots and then taking them to reheat the next day?

    A tasty (but stinky!) one is tinned mackerel in tomato sauce with a spinach, pepper and carrot salad.

  • Hi all,

    I had a quick flick through for some answers but couldn't find much.

    So, where I work, we don't have a staff room equipped with any decent equipment - just a kettle. No fridge, no microwave, no toaster.

    I spend an absolute fortune on buying food everyday. Mostly I visit the Co-op across the road (too easy to do!) or delis further down the street. It needs to stop, it's unhealthy and I cannot afford it.

    So I was wondering if anyone had any ideas for cheap and filling packed lunches/receipes to vary my diet?

    My two major dislikes:
    Salad - I just can't bear it on it's own, I can only tolerate a little lettuce/cucumber/cherry toms in sandwiches or mixed with pasta/rice if chopped up small.
    Fish - I only like tinned tuna, nothing else. :s

    I don't mind eating rolls/sandwiches once a week or so, but I do eat too much bread. I also eat those mugshot type pasta things but don't find one on it's own very filling!

    For breakfast I tend to eat porridge at work (I buy those pots from BandM bargains)

    I just need to stop spending £20+ on lunch!

    You could use cous cous as a base- just put in a bowl and pour over some boiling water and leave for 5 mins. Hey presto.
    If you get the flavoured ones, you could bring some bits and babs to add to it (like nuts, seeds, prawns etc).

    When I took packed lunches to work, I quite liked wraps or pitta pockets. You can fill these with whatever you fancy. The wraps freeze well as do the pockets. Just remember to seperate with a sheet of greaseproof (you can re-use the sheets for the next pack) otherwise they weld together in the freezer. :D

    OH used to take bagettes as these are more filling. He had cooked meat, I prefer cheese.

    For snacks now I take cream crackers and mayo (unless you work somewhere very hot I wouldn't worry about not having a fridge it will keep fine.
    OH takes cherry toms, mixed fruit, dried fruit and nuts.
