    Frozen chicken seems the way to go - will search for cheapest and mix with mayo etc (they will think there luck is in its usually cheese or ham, or ham or cheese).

    My favourite has to be marmite tho :D
    Don't freeze it with the mayo in it - it'll separate and go yucky.

    Eggs wont defost nicely either, or cheese savoury that's been mixed up. Plain cheese and meats are perfect though.

    Would just like to thank you all for your input and suggestions for OH's packed lunches a little further up this thread. I am getting a bit more adventurous and actually quite enjoying it (made him some mini corned beef pies which were a big hit :D)!

    (BTW, I did ask him at the time and got the 'I dunno, whatever you think' response -- hence the brainblock!)

    I haven'r read the thread, so apologies if theres something similar to this(I made it up tho so I doubt it lol)

    Mediterranean Couscous

    Make up cous cous & allow to cool. Slice and dry fry some red, yellow or orange peppers.

    Chop finely spring onions, tomatoes, olives, feta cheese, sun dried tomatoes and basil.

    Mix into cous cous and sprinkle the whole lot with lemon juice, salt & pepper.

    I make up a big bowl at the beginning of the week and keep in an airtight container in the fridge and it'll keep for 3/4 days.

    Eat cold. It's a burst of flavour with each mouthful (and if you're doing SW, only a couple of syns if you count the feta as a HEA)
    After 4 years of heartache, 3 rounds of IVF and 1 loss :A - we are finally expecting our miracle Ki11en - May 2014 :j

    sorry to drag up an old thread, i was reading the thread on frozen sandwiches but no one seemed to ask about the sandwiches going all soggy as they defrost? If i was to make tuna may and chicken may and then freeze em, do i just use ordinary sandwich bags in the freezer? And when i take em out in the morning do i keep em in the bag or put em in a box? Since i'm driving all day long is it ok to keep em in the car with me or should i keep em in a small cooler bag until ready to eat?

    I find mayo doesn't freeze particularly well. I freeze the sandwiches in cling film. In the morning, unwrap and put into a sandwich box which is kept at room temperature. By lunchtime the sandwiches are fully defrosted and not soggy. :)

    Hi All,

    I bet there have been a lot of threads of this nature but I wonder if you can all give me some inspiration please?

    I would like to shift a good bit of weight before December 5th :-) My big problem is lunches at work. I do appointments and I'm constantly driving in between them so I usually grab a sandwich or panini or Greggs (yuk) while I'm on the go.

    From now until December I'd like to make something before I go to work. Does anybody have any seggestions please? Salads would be great as I can keep them in a box in a cool bag in the boot.

  • Fruit Salads, in lock box. Easy to make. Buy whole pineapples and tinned fruit as required.
