    Cold pasta salads are nice; you can get inspiration from the ones in supermarket chiller cabinets, or looking online on mysupermarket.co.uk. It's just cold pasta, with mayo on. Then various salady bits and combinations of things like: grated cheese; chicken/bacon; potato/boiled egg.

    Why not do strips of veg, Cucumber, pepper, carrot celery, a few cherry tomatoes and a pot of humous, salsa or guacamole to dip.

    Wholemeal pitta again with a dip.

    I would agree that you need to look at fresh raw ingredients and not rely too much on processed items.

    What about mixed beans, you can buy them in tins for ease usually called salad beans, mix these up with grated carrot, raisins, lettuce, tomato, cucumber onions etc and use a vinegarete dressing.

    Couscous with roasted veg is lovely hot or cold, same with brown rice.

    Oatcakes with houmus or soft cheese

    the list is endless to be honest

    Swap the sugary granola for some mixed nuts and seeds with some dried fruit.

    and use fruit to sweeten natural yoghurt.

  • Frittata is a lovely lunch meal; make up with your favourite veggies, not just the classic potato and onions.
    I often make a roast veg salad of onions/peppers/mushrooms/tomatoes) seasoned with herbs and sliced over the top of good green leaves like rocket and watercress. Then, your protein topping could be some slices of grilled halloumi, or some cottage cheese, or hoummus.
    Pasta salad with homemade pesto, sprinkled with those nice seed mixes and lemon juice, with extra roast mushrooms on top and a little grated parmesan. Or slices of mozzarella.
    Homemade falafels, in wholemeal pitta with minty yoghurt dressing and baby spinach leaves or watercress, very tasty.
    Homemade guacamole, with rye crispbread to dip and a spicy fresh tomato salsa. Slice up some cooked veggie sausages to stick on top.
  • I make a houmous type dip, chop olives and feta and then have it with pittas. pack of 6 wholemeal pittas are under £1(i think) olives jar in asda is £90 and feta is about £1 and then i just use a tin of chickpeas to make the houmous with which are under 50p i think so £3.50ish and its a whole weeks lunches and then i use my extra pitta for something a little more decadent(!) on the weekend. I rotate this with ryvita(boring sorry!) and phili.

    I did flip on that one! Its probably the elf in the keyboard....

    But it did make my day:o
  • Hi , do you like pitta bread?? i buy value ones and there only 20p and fill just like a sandwich with loads of salad bits. my favouite tho is to fill it with houmous , red onion , lettuce and some grated carrot.

    You could try making a cous cous veg pot too which would be lovley and cous cous is alot lower in fat than rice or pasta.

    Whats worse is I had to re read about 4 times before i noticed! 90p...sorry folks!!!

    As the op hasn't returned to the thread and it's dropped down the board I've added it to our existing one on lunch for work which contains many cold, veggie ideas.

    Never enough fresh bread.....

    Have you tried making the sandwichs all in one go and freezing them, then you just have to add salad or a pot of salad.

  • Great idea - will consider that over the weekend !!!

    Come to think of it my cousin works in M & S and buys all the left over sandwiches and freezes them, it never dawned on me lol x
