    Hi,

    I'm looking for ideas to fill a large lunchbox for my grown son - he's bored of our usual stuff but we cannot think of anything other than our usual. He's a fisherman, away 4am and home about 7pm, so needs loads!!!! To make things more difficult - he's seriously allergic to dairy and eggs.

    At the minute he takes 4 rounds of sandwiches - either cold meat, tuna - with loads of salad on and pickles, or peanut butter/jam occasionally. Loads of home baking, bananas and a soya pudding (yogs don't keep well in the weather,but when I can get them he has them early in the day). He takes pasties sometimes, left over pizza and left over lentil pie - but day in day out its a bit uninspiring - these guys really look forward to their lunches too!!!!!

    We're particularly looking for savoury ideas if you can think of anything??? We can't use a food flask as I cannot find a stainless steel one - soup is out as its too turbulent out there for hot and wet stuff so a normal flask is no use - and no facilities to heat food (the boat has a cooker but it's too dangerous when others use it for ordinary food, so everything has to come from home.

    The only thing I can think of that you haven't mentioned is pasta, loads of things made with pasta are lovely cold, and it's very filling... I suspect you've already thought of it though and perhaps he doesn't like it much.

    thanks jpscloud, yes should have added that to the list - he does take it cold with chicken in but he's fed up with that too!!!
    Thanks for your time though - suspect i'll have to leave him to it for a while, so he re-appreciates my efforts!!!!!:)

    what about chicken and mango wraps?
    it does have mayo in it but you can leave that out.

    this recipe serves 4.

    all you need is 4 chicken breasts
    2tbsp of oil
    2 ripe mangoes
    2 tbsp of mango chutney
    12 flour tortillas
    juice of one lime
    4 spring onions
    1 small bunch of roquette
    salt and pepper.

    heat oil in pan and cook the chicken until golden brown. cut when cool.
    peel and chop the mangoes, mix with the chutney and lime juice, stir in the chicken 1/2 tsp each of salt and pepper.

    divide the mixture between the tortilla wraps, sprinkle with spring onions and roquette and roll.

    and for dessert what about home made flapjacks with sultanas?

    You can also do an old bakery trick of splitting a crusty loaf lenghways and stuffing it with sausage rolls and pies and brown sauce. The cutting it in slices down the way.
    Also meat is filling, do chicken drumsticks, bbq, chinese, spicy etc.
    Cold bacon sandwiches.
    Cooked sausages with ketchup for dipping.
    Layered salads are also good.

    and potato halves stuffed with fillings nice hot or cold.

    lasagne is good option too.

    what about cous cous? if he likes spicy stuff you can tart it up with a chili sauce

    I would say noodles with chili sauce but they would need to be egg free

    what about humous and pitta bread? fajita type wraps? chicken drumsticks?

    jsut seen someone post about mayo - you can get egg free mayo in healthfood shops if that helps at all?

    Thanks guys, you are brilliant.
    Love the idea of wraps - we do have vegan mayo so no problem there - also savoury rice - he likes that for a snack so a pot made up with chopped meat would be a change.
    Cold bacon sandwiches a great idea too!! ditto potato halves, as he loves baked potatoes - think i'll bake some with sausages through the middle.
    Like the idea of stuffed loaf - I do make huge pasties like my Dad took down the pit - savoury at one end and sweet at the other.
