  • Cous Cous with some diced red/yellow/green pepper and diced ham or chicken is very nice - and can be eaten cold.

    Cottage Cheese in a tub with some Ryvita and a topping of your choice.

    Pizza "fingers" - just make a square shaped pizza with any topping you like and this can be cut into "finger food" that fits in a lunchbox.

    Falafel in pitta bread with salad (remove the seeds from cucumber and tomatoes to prevent the pitta going soggy)

    I could go on....

    I think there are at least two threads on OS with ideas for packed lunches..... unfortunately I'm no good at link thingies:o or I would put them in for you.

    I thought this thread would have been more popular during picnic season:confused: Then again I suppose the weather hasn't been on our side has it:o

    No1 offspring is certainly enjoying the change from sarnies, by having a tub of pasta or couscous with various bits stirred thru it. I've yet to convince the other two....but I'm working on it:p

    From a couple of other threads I mosey on to, we've been discussing the possibility of using something like good, clean baked bean or tuna tins---that sort of sizing---to make individual cakes & puddings. I'm now thinking that they would also make ideal portions of things like jelly or trifle etc, to be transported in a lunch box, if you don't have the posh plastic boxes.

    I made some bean burgers from a recipe on here. They were lovely and the next day I put the leftovers in rolls for a picnic - delish. You can put sliced tomato, salad or pickle/chutney - whatever.

    If you used Tesco Value rolls which work out at 2p each it will be a cheap and nutritious lunch. My burgers worked out at 4p each.

    Recipe - I only used one egg. I also mashed the beans with a fork and grated the bread to get the crumbs (not perfect result but didn't notice in the eating). I also didn't have sweetcorn so left it out. I used tesco Value red beans - save the liquid for soup - or chuck it away!!!!!!!!! I also fried the onions a bit before mixing and then cooked the burgers in the same pan. It sounds a bit of a faff, but truly it isn't. I got 10 burgers.

    Bean burgers

    Amazingly, these have become a bit of an 'I don't have time to faff around' meal as I'm surprised how quickly I can knock them together now. 10 minutes preperation to make about 8. I timed myself!

    2 tins of beans, rinsed, drained and dried on a teatowel
    1 chopped onion
    Handful of sweetcorn
    2 grated carrots
    2 beaten eggs (one if large)
    1 very thick slice of bread (or 2 if from a ready sliced loaf.)
    clove of crushed garlic
    chilli powder to taste
    wholemeal flour to coat

    If you have a food processor:

    Take a chunk of bread (about half an inch thick) and blitz to bread crumbs
    Change the blade to a grating one and put through a couple of carrots
    Tip into a large mixing bowl
    Empty the beans into the processor and blitz briefly. (I've used pinto and black eyed together, or kidney bean so far)
    Add to the bowl
    Add chopped onion, crushed garlic, some sweetcorn and some chilli powder and stir.
    Add a couple of beaten eggs and mix.
    Shape into burgers and place on a plate of wholemeal flour to coat.
    Put in fridge for as long as you can to firm up a bit

    I often end up taking one night's leftovers from dinner for lunch the next day. Often the flavours continue to develop and it tastes even nicer second day. But having the same thing two meals in a row might be a bit dull for some :)

    Sarnies can be boring; you could have cheese & pickle in your ordinary bread & it'll taste like it always does, but use french stick instead & it makes it summat special. With all the varieties of bread & rolls there are now, it should be fairly easy to make interesting lunches from just a handful of favourites.

    When the offspring were littluns at school, I would take the MrT value rolls & cut slices into the top of the roll & put in slivers of cheese & cue to make them look like hedgehogs...or around crimbo I'd use pastry cutters to make marmite crimbo trees:o They had round 'smilie faces' made from luncheon meat too.....:rolleyes:.....do you think they'd like me to do them again now they're out to work:rotfl: :rotfl: :rotfl:
