How about a tin of cannellini beans, rinsed, mixed with some tinned tuna, spring onion and olive oil. Add some lettuce, cucumber or tomato if you like - sounds not very nice, but tastes wonderful.0

^^^^^That's what I do and I love it, only I use a tin of mixed beans. Usually a large tin of beans, tuna and then whatever else I can add from the fridge (toms,cue etc) lasts me 2 days. A long time since I did the lunch to work thing but if you have a microwave, then most things can be reheated fairly successfully. Perhaps, when you make any evening meals that are suitable, you could make extra and freeze into lunchsized portions.
I used to do things like bolognese sauce on jacket spud. In fact quite a few things can be successfully bunged onto a jacket spud or reheated rice. Seeing as you're a bit fussy about what you like, why not try making your own soup out of ingredients you know you like? There's loads of easy recipes about!
You may even find recipes to make some of your other meals too, therefore working out cheaper and nicer in the long run0 -
my OH takes leftovers of whatever we had for dinner the night before and reheats in the microwave. I love this option as no extra work needed from me!0

Oddly enough I was going to ask exactly the same question. I tried the Demotivator from this week’s tips page and worked out that my partner and I spend between 3 and 5 pounds per day on lunch. (or about £2000 per year! EEK!) On occassions I make extra food to bring into work but quite frequently my partner forgets his and eats it when he gets home!
Also I find that when it comes to eating preprepared lunch I end up rather disinterested (though I know it tastes good etc). I just need inspiration too.
So thanks to everyone who put something on here! And thanks Squeaky for pointing out the Lunch thread.

1. Leftovers from night before is good idea. I often freeze mine though so I don;t have to eat the same thing the next day and they are less likely to leak when travelling and if as occasionally happens the good chef is on duty and the food is edible then I can just shove it in the fridge for the next day.
2. Things which have a high liquid content re-heat better in the microwave.
This ones a goodie. Cook Brown Rice, some Puy Lentils. Separately fry onions, red onions, garlic and cumin seeds in butter. Combine the separately cooked ingredients. Try adding a few chunks of Hallouimi Cheese. Reheats wonderfully.0 -
I absolutely love Indian food & the dryer items heat up beautifully & taste even better the day after they have been made though some are quite acceptable unheated.Chicken tikka(I have a great recipe which cooks it in a pan on top of the stove), chicken tandoori, dry vegetable curry(bhagee) for example. I make my own coleslaw to go with the spicy Indian food as I can't stand the bought stuff & it is so easy to make as you simply very finely slice white cabbage, onion,add grated carrot & then lovely thick mayonnaise & mix everything throughly.Bon apetite!0

AAAAGH NOOOOOO! Rice is awful for food poisoning. My Uncle did a whole dissertation on it at university, and forbids rice salad at any do-s. Hope you have been lucky so far with your rice!0
