Hey Laurabllue, have you thought about a bento box? You can then microwave something in the morning and it'll still be piping hot at lunch time.

although didn't go shopping yesterday as planned still managed to bring lunch from home, took last 2 slices bread to toast with low fat cheese spread, and had a banana as well. did big shop after work so feeling positive about the week ahead, going to take dog out now then come back and make lunches for me and kids.
also avoided the evil choccy machine so that was a definate bonus!0 -

I had to post as am so proud of myself! I didn't make any bread last night so wasn't anything to make a sandwich with today, so as I was running out of the door this morning - late as per- I just grabbed 2 wheatabix (shops own) and a very ripe banana. I was on training today and as lunchtime neared and many ppl were going to the cafe to get lunch mine seemed less and less appealing! But with a will of iron I stopped myself from going to the cafe, although it wasn't the most appetising it certainly was satisfying when I still had my tenner in my purse at the end of the day!!DF as at 30/12/16

I love this thread. Now myself,DH and DS all take packed lunches. Its saving us a fortune. Every sat morn we have a production line of a weeks sandwich making,and i freeze them. it only takes about 15 mins. In addition we take HM soup,pasties,pasta etc sometimes. Apples and carrott sticks ansd raisins are good to take as well as HM flapjacks or scones. I also re-use the plastic freezer bags by rinsing and drying. A flask is good for tea or coffee if you cant get it free. As well as good old tap water."The purpose of Life is to spread and create Happiness" :j0

Spinach or other tender greens, thoroughly washed and trimmed
1 med onion, finely chopped
2-3 medium cooked, sliced potatoes, I sometimes use half regular half sweet. You can peel them but I like leaving the skins on
1 tin tomatoes, or a similar from fresh, peeled and seeded
6-8 eggs, depending on skillet size
4 ounces shredded cheese
salt, pepper
1/4 tsp paprika (optional)
Olive oil
Coat the skillet with the olive oil and then add about 1 T additional oil. Saute onion over medium heat until translucent. Add potato slices, and another Tbs. oil, if needed. Lightly brown potatoes, turning as needed. Remove potatoes and onion to a bowl.
Fill skillet with greens and saute, turning the pile of greens until they are thoroughly wilted.
Put potatoes & onions back in skillet. Mix in tomatoes. (Gently so as not to break potatoes.)
In a separate bowl whisk eggs, salt, pepper and paprika until until fluffy.
Scatter shredded cheese over mixture in skillet. Pour egg mixture over all, gently lifting the greens mixture to allow the egg to run throughout. Don't mix - it will make the frittata heavy.
Reduce heat to lowest and cover skillet. Cook for 35 - 40 minutes, until egg is thoroughly cooked. You can check it at 25-30 minutes, but try
not to take the cover off too many times. If you have a broiler (grill that is, my mum is American) that will accomodate the skillet, you can gently place the skillet with the cooked fritatta under the broiler flame for a few minutes to brown the top.
Enjoy, its fab! Easily serves a dinner party of 6 with a side, and makes great packed lunches

All going well at this end. Even got a lunch in the bag as took lunch one day I was working a half day (which I hadn't planned to do).
Tomorrow's is HM lasagne and then it'll be tuna mayo and rocket sandwiches.
