    Mushroom rissotto
    Flat top mushrooms grilled with pesto, which I usually eat on a roll but would be fine on their own with a salad.
    Salads, I often bring the home made vinagerette in a seperate jar so it doesnt get soggy
    Jacket potatoes, which I bake the night before (usually while dinner is the oven) then warm up in the work micro with half a can of beans
    Veggie curry, served on rice or cous cous.

    Please put me down for 4/5 HM lunches a week. Road-tested it as a lurker this week and managed 3 1/2( the half being a coffee and a fruit bag to go with my HM sandwich ):(

  • I know I'm a bit late but can I join too? this is just what I need to stay away from the evil vending machine and it's magnetic force that turns my pounds of cash into pounds of fat :eek:

    I will aim for no bought lunches/snacks and all food from home for rest of March, had bad week buying sandwiches out and ended up with sweets and cakes as extras, not good, no willpower :o

    Am thinking roll or sandwiches and cup-a-soup as basics, plus fruit and yogurt, maybe some cheese n crackers as a change,but will have to make sure prepare lunch night before as no time in the morning.

    going shopping tomorrow so will make a list for the week ahead and try to buy healthyish.

    looking forward to less lbs on my waist and more £s in my purse!

    Thanks all of you for all your excellent ideas. We don't often have leftovers in our house (!) so I think tomorrow I shall make a risotto and a pasta dish and do daily portions. Never thought of crackers and cheese, that's a good easy one for when I'm not organised enough. We have a microwave in our staff room so it's easy to warm things up. Thanks again.

    Ahhh so late for this challenge but i want to join in again!!

    I bought 1 sarnie last week so from this day forward NO BUYING LUNCH!!

    I've got some rolls and lunch meats for this week, along with Tuna, pasta, quorn, mixed veggies, so should be able to do this!

    Nice to think of us all getting organised on a Sunday night, ready for a week of brought-in lunches! I'm going to make a big old pan of fried rice in a minute which will do me for lunch AND tea for at least two days, and some baked pears with a frangipane topping which will be fabulous cold for 'desk-pudding'. And I'm going to take some spare rib chops out of the freezer to bake with barbeque sauce for later in the week. This challenge has so many fringe benefits - it makes me shop better, cook better, eat better, never mind keeping the money in my purse where it belongs - not in the till in Marks & Sparks food hall!

    Hey, I've been trying (and failing) to do this for a few weeks, so maybe joining this thread will give me some kind of incentive...call it peer pressure!

    I've just started a new job so until I get my full months pay at the end of the month money is very tight and I just can't justify my usual spending on lunches. So for the rest of the 18 working days my aim is to make lunch for 14. Tomorrow's easy as it's a training course so free lunch :D However, the rest of the week will bring its usual challenges (no microwave/kettle, very little space in the fridge and the fact I don't like sandwiches - tricky)
