I try to avoid adding too much to home made burgers. I leave that to the professionals.
I squeeze home made burgers very, very hard, before forming them into shape. I find that imagining that they are, or are part of, someone you don't like helps.If you fold it in half, will an Audi A4 fit in a Citroen C5?

Sorry, just saw your query, might be a bit late for answer. No egg needed, the lamb mince is quite fatty and holds together on its own. If you want a burger to stick together better I find that kneading the meat more seems to do it - breaks it down more and makes it muck stickier...I'm sure that's a technical term0 -

Pork Steaks with Mint
Sounds unlikely but simple and yummy -
Melt a bit of Butter in a shallow pan that you can pop in the oven as well as hob, then sear a couple of lean pork steaks in the butter, get both sides just brown, then fish them out.
Take pan off the heat, throw in a few sprigs of mint.
Then `de-glaze` the pan with cider. I have also used apple juice for this, works well, but the cider does even better. (There`s no alcohol left when you eat it. )
Heat the pan again, put the pork steaks back in, and another couple of mint sprigs. Cover with panlid or foil, and pop in medium oven.
(I`ve tried this with olive oil but doesn`t taste as good - I`d say the butter is essential in this one)0 -
I bought some fresh mint and its grown loads just in a few weeks.
We tend to add it to new potatoes whilst boiling and I'm going to attempt mint sauce but I wondered what uses/recipes you recommend.0 -

Not a recipe but if you have lots of surplus mint - put in the freezer. It can then be added straight from frozen to potatoes when boiling . I find it a useful way to save wasting it0
