Years ago i stupidly planted mint straight into the garden which now means we end up with loads of the stuff.

I was going to make some kind of mint chutney/relish/sauce with it but can't seem to find a recipe i like the look of (anyone got any?)

What would you do with it?

My mum had the same problem and gave me loads. I've washed it and just frozen it, just pull some out when i need it - makes amazing Mojitos!!

I would vote for mojitos too!

I'd read about freezing mint leaves in an ice cube tray with a little water but I've tweaked this idea a little by freezing the mint leaves in freshly squeezed lime juice instead. This means that I can have a mojito whenever I fancy it, even if I don't have any fresh limes or mint at the time.

Mix a good handful of chopped mint into natural yogurts & use it as a marinade for chicken.

Chop a generous handful of mint, add the rind of 2 oranges, mix into a jar of redcurrant jelly. Makes a lovely alternative to mint sauce. A great accompaniment to lamb. I always have a jar of this in my fridge since trying it a few years ago.
