    I just thought :rolleyes: can you just freeze the sprigs of mint, maybe in an ice cream carton. Would that work?
    I just pick the leaves off (save the stalks to put in with new potatoes if you are boiling them) rinse them, and put enough to make a serving of mint sauce in a food bag (as many bags as you have mint for) and put in the freezer. When you take the bag/s out, just roll a rolling pin, tin of something, jam jar etc over it and you can have mint as fine as you want it. Don`t let it thaw first though.

    I've been making a minty yoghurt dip with ours, (theres loads of it, we only got a mint plant so we didnt have to buy it for pimms :D) just whizz up a handful of mint in the blender with a chunk of cucumber, add it to a dish of plain yoghurt, add a pinch of sugar, black pepper, garlic salt, a tiny pinch of chilli, but obv you can do it to your own taste.

    The mint is growing nicely in the garden now. In an effot to be OS and save money I am looking for ideas for using it up. I have tried mint sauce and also mint tea but cannot think of anything else,do you have any ideas?

    Mint shredded over lamb. Yum. And shredded into many salads. I like shredded crisp letuce, mint and pomegranite. Mint ice...like a sorbet. Minty iced tea and cocktails. Mint and pea soup. delicious, and I like it cold on a hot day.

    yogurt and mint dressing for salads or lamb kebabs

    Or you could use it in cocktails :D Mint julep, pimms, mojito

    I really like a light and fresh salsa type of thing, goes really well with BBQ meats or grilled fish. Finely dice tomatoes, cucumber and a little red onion, add the juice of a few limes and some good olive oil then add plenty of shredded mint and fresh black pepper. Also, if you add feta and black olives and you have a Greek salad

    Mint is a lovely, fresh accompaniment to cucumbers. I often make a salad from these two ingredients when the weather is very hot.

    Claudia Roden also has a recipe for honey and mint vinaigrette which is good too.
