    It's Hot Cross Bun time of the year again and I had a go at making some last night. Here's my recipe.

    * 625g strong white flour
    * 11/2 tsp fast-action dried yeast (7grams or 1pkt)
    * 45g golden caster sugar, plus 2 extra tbsp
    * 45g chilled butter
    * 1 tsp each salt
    * 1 tsp ground cinnamon
    * 1/4 tsp ground allspice
    * 1/4 tsp grated nutmeg
    * 100g raisins
    * 25g chopped mixed peel
    * 1 egg
    * 275ml milk, plus 4 extra tbsp

    I use a bread maker to do the mixing. Dumped everything into my breadmaker bar the raisins and mixed peel. After about half an hour I dumped the raisins and mixed peel into the mix and then went and watched some television.

    After the machine had done it's work about 90 minutes I turned it out onto the table, divided it into twelve section and shaped them the way you would a scone.

    With my knife I made a cross on the top of each bun, covered them with a damp tea towel and let them sit for another 20 minutes.

    While that was happening I made up a flour paste 2oz of flour and about 2 table spoons of tepid water and bunged the resulting paste into a small food bag, cut a small hole in the bag and spread it over the cross on each bun.

    Popped them into the over at 200 C and it took about 18 minutes to have them come up a golden colour. I peeked in at 12, 15, and 18 minutes just to see how things were progressing, my oven is a pretty old one and you have to watch it carefully.

    The final bit was the bit I found most difficult and any suggestions in this regards would be welcomed.

    To make the glaze I used two tablespoons of golden caster sugar and mixed it with four table spoons of milk. In a small pan I first of all warmed the milk stiring all the time to make sure the sugar dissolved and then brought the mixture to a boil and let reduce somewhat. I removed my hot cross buns from the oven and with a pastry brush put some of the glaze on each bun.

    For my liking the glaze was overly sticky and I would like to figure out a way around this - any suggestions. But they do taste lovely :j

    Was out shopping yesterday and bought a Teflon Non Stick Cooking Mat used them on my hot cross buns - see above and it worked a treat. I was disappointed though at the cost and size of the mat. I paid over £3.00 for it in my local Sainsburys and it was only 33 x 40cm.

    Anyone else use these mats and do you know if you can obtain a roll of the stuff - at a reasonable price of course.

    I think I have seen these in Poundland. Think I will have a go at your Hot Cross Buns recipe :T

    Got some Gingerbread Muffins in the oven, recipe here. Also did pizza yesterday, first time I have made pizza for about 25 years ...! Turned out great.

    Hi Kevin, I use to use the black cooking non stick mats from Wilkinsons.
    I have now invested in a set of 3 silicone trays from QVC. I payed a bit for them but rairly shop on QVC. Theese trays are brilliant and are in use most days as nothing sticks and they wash so well.
    If winter comes, can spring be far behind?
    Spring begins on 21st March.

    I am going to bake some flapjacks at the same time as cooking the family dinner to use the same oven space and heating.
    If winter comes, can spring be far behind?

    I have baked rock buns and a farmhouse fruit cake today and now have the lamb slow roasting ready for tea.

    3 dozen Twinks as requested by my children....chicken and roast potatoes in now .
    Feeding 6 Adults 1 Teen a 8 year old with hollow legs and a very fussy 5 year old. Also 3 cats and 3 fishies
    To include all Food,Toiletries and Petfood.

    I've made 12 single portion Alnwick stews (in foil trays), 5 cottage pies (in foil trays), 8 lasagnes (foil trays), 4 portions of curry, 5 portions of chicken and white bean stew and best of all 48 twinks :)
