Lemon curd cake

3 dozen twinks hobnobs (got all the family making them). a loaf and 4 bread rolls and some home made butternut, carrot and leek soup for dinner0

So far made 24 of these, same recipe I posted last time, just upped the temperature to gas mark 5 and baked for 18 minutes. Now just need to decorate the them :rotfl:'I solemnly swear that I am up to no good'0

I baked a date and walnut loaf today, the first time I have really tried anything other than "normal" bread.
When I put all the ingredients together, it was very wet, so I had to add more flour (standard strong white), and even then it was a bit tacky, so I just dumped it in a large covered bowl to rise - which it didn' really do.
So, after a few hours I shaped it into a kind of "Jabba" replica and placed it on a baking sheet, where it just sulked for another hour.
Anyway, I set the oven to 200C and put it in for half an hour. I took it out (It had risen!!), and put a skewer through the deepest part, and decided on ten minutes more.
The nd result was a very dark crust, but I have just shared a piece with the OH, and it tastes fantastic. It has a good open bread texture, and the fruit and nuts are evenly distributed (Not sinking to the bottom). The taste is not too sweet, and the nuts (which were pre toasted) and chopped dates have a real depth of flavour.
I will be trying this one again.0 -

I,ve made custard cookies, chocolate brownies and vanilla and choclate marble bunt cakes.
I,d like to give sugar cookies a go for Christmas gifts and use royal icing to make em pretty - but I am not artistic - anyone done these?Note to self - STOP SPENDING MONEY !!

I've tried both 4/2 and 6/3, also tried the weight of the egg method. I use 8" tins. I've also tried both a mixer, and a wooden spoon. I can make any other type of cake but the Victoria sponge beats me.

As far as I can remember:
350g strong white bread flour
210ml warm water
1 x 7g pkt instant yeast
1 tsp salt
80g butter
100g brown caster sugar
150g chopped dates (stones removed:rotfl:)
50g chopped walnuts
Add the warm water and yeast in a bowl with 2 tsp of caster sugar and cover - leave to activate for 15 minutes.
Place the flour in a large bowl with the salt and rub in the butter.
Then put the rest of the ingredients in and mix, finally adding the activated water yeast mix.
I stir it all together, then turn it out onto a floured work surface and knead for a while, then put it in a greased large bowl and cover.
Usually if I do this with bread it grows to a ginormous size, but this hardly moved.
Turn the raised dough (sarcastic laugh) out onto a floured surface, shape and place on a baking sheet.
Leave to rise, and then place in a preheated oven at 190C for 45 minutes (or until baked through - use the skewer test).
Remove and place on a cooling rack.
Wait for a while, then get impatient, get the bread knife and cut a large slice off, spread with butter and eat.
Repeat this procedure until satisfied;)0 -
Very busy day. Daughter scullerymaided. So:
8 large fruit pies total cost of ingredients £2.80 so I think about 32p a pie. They are enormous! Well chuffed.
Also 2 batches of cinnammon and cranberry rolls, sadly one lot never rose, total mystery. Cost around 12p a roll, although 1 batch only fit for the dogs.
12 cup cakes, eaten as cooled...not even iced.
