    made some scones. Not sure what I did wrong but they are rubbish.

    A carrott cake and some brownies still in the oven. I will give most of it away. Just wanted to do some baking but don't want the calories :rotfl:

    Next time I will make some gingerbread people. And I will eat one or two of them LOL!!!!

    Can you post the recipe for this? Was it as nice as a cake made with eggs etc.? It looks fab!

    This is recipe I used with a few amendments:

    - Doubled to fit 2 x 20cm sandwich tins
    - Swapped the vegetable oil for sunflower oil
    - Swapped the distilled vinegar for cider vinegar
    - I used 4 rounded tablespoons of cocoa as heaped dried the cake out a little and level tablespoons didn't make it chocolatey enough :)

    It's quite a rich, moist cake and you can't tell that it's vegan. My friend tested it on his workmates and they didn't know it was vegan until he told them :) For the fudge frosting I used:

    - 110g of dairy free marg (I used the block form of Stork in the foil wrapper as it doesn't contain dairy, unlike the tub form).
    - 400g icing sugar
    - 60g cocoa powder
    - 90ml unsweetened soya milk.

    Put all ingredients in a metal or glass bowl, continuously stir over a bain marie until smooth, leave to cool and done! It's enough to cover and fill an 8 inch cake and looks like this:

    Made some chilli and cheese scones, de-lish with HM tomato relish.

    Haven't baked for months! My house now smells like a home. :D

    Just put a dozen muffins and a tray of 14 scones in the oven. My pathetic attempt at Victoria sponge will go in next - no matter what I do and what recipe I use they're usually reminiscent of a couple of pancakes, but I keep trying!
  • Hi I've been lurking here - that vegan chocolate cake looks delicious!

    I've just made banana bread (family are suddenly refusing eat bananas so they were over-ripe) and at the same time cooked a casserole of leftovers in the oven - smells great!

    I'm curious, what size tins do you use and how many eggs do you use in your recipe?
