    FREESPIRIT - that sounds great - and low fat ;)

    Today I have baked 2 x Jamacian ginger cakes and 2 x tea loaves - will wait till they cool and slice to share between us, MIL, and our lovely 90 yo neighbor
    Note to self - STOP SPENDING MONEY !!

    Did you use a Nigella voice when making it?
    It's really easy to default to cynicism these days, since you are almost always certain to be right.

    Ha it was very low fat for me, i never got a mouthful, it had all gone by the time i was ready for some :rotfl:

    I was so eager that I pressed submit and couldn't edit to add the recipe as requested a few days back:rotfl:
    So here it is,

    6oz Butter
    6oz Sugar
    6oz SR Flour
    1 teasp Baking powder (optional)
    2 rounded teasp Ground Ginger
    3 extra large Eggs or 4 medium Eggs
    1 to 2 tablesp of hot water
    2 tins of Pears
    4 tablesp of Golden Syrup

    Optional
    6 chopped Stem Ginger
    or
    2 tablesp of Ginger preserve/marmalade

    Grease 2 small loaf tins with butter and add 2 tablespoons of golden syrup to each and sprinkle some chopped ginger and arrange the pears.

    1. Cream butter and sugar
    2. Beat in the eggs with a little sifted four one at a time.
    3. Fold in the rest of the sifted flour, ground ginger and baking powder.
    4. Add chopped stem ginger and some of the syrup (upto a tablesp) or a couple of tablesps of ginger preserve. Mix well.
    5. Add a tablesp of hot water and mix.
    6. Divide mix between the two tins and gently ease the mix into the corners so the pears are covered.
    7. Back at 180 (fan oven) for approx. 45 mins. Check after about 35 mins. I stick a knife in and if it comes out clean it's done:)


    Eat Hot, Warm or Cold.
    It's nice on it's own but better with ice cream, custard or cream. Freezes well if it makes it in there:rotfl:

    Let me know what you think. I adapted it from a pineapple upside down cake in a cookery exam many years ago as I hate pineapple unless it's fresh, it's been a favourite since.
  • Also made a few Apple pies and a Plum Crumble Pie whilst I had a chicken roasting ready for tomorrow or should I say today !

  • DD is just about to put 2 brioche's in the oven, she made the initial mix last night but it takes hours of chilling and them bringing back up to room temp but they look absolutely fabulous, can't wait to eat them! :D
  • Just a quick cocholate / orange loaf cake whilst oven was on
