While I cooked dinner - made some Lemon/Sultana Muffins. I had half a lemon left from cooking fish yesterday + small amount of Sultanas in the cupboard.
Result - 12 Muffins - made with 2 ounces of the 90p Butter from the Lid. offer. Cost per Muffin - 7p.

I have made a tray of shortbread, tray of flapjacks and six small blueberry muffins and a dozen large blueberry ones.

I will vacuum pack some of the shortbread and flapjacks for later in the week and freeze half of the muffins. All made when the chicken was cooking too :-)

They certainly are! I adapted a baked doughnuts recipe from the Lakeland website by using Doves farm g/f flour and adding a little more milk.

I've just made a loaf of white bread, not very exciting but it's the first time in months I've made my own bread!

But reading the above posts has given me the idea to make pineapple upside down cake, I have half a tin of pineapple left over from last nights tea.
