I've worked out how to upload, but appear to be having problems with sizing - tee hee.

Microwave pineapple upside down cake.... no photos available as it didnt last long enough to take one, was scoffed on sight
So easy to make if anyone wants recipe
cream 2oz sugar with 2oz butter/spread
slowly add 1 beaten egg
fold in 3oz self raising flour
add 1 tablespoon of pineapple juice from tin
Put pineapple chunks in bottom of small pyrex bowl
Drizzle over 1 tablespoon golden syrup
Cover with cake mixture
Cling film over and make hole in centre
Microwave on medium-high for 5 mins (my MW 1000w)
It was delishshould serve at least 4

Millionaires shortcake for hubby to take to work

Had a bit of a mammoth baking morning today. I made almond & raspberry tarts for OH's lunch box for the week, lemon drizzle cake for my afternoon treat for the week, chocolate chunk muffins, chocolate ice cream dessert for tonght's pud and rolls for lunch. Recipe for Cinnamon & Raisin bread:
A standard white bread dough which I make in the breadmaker, but easily done by hand:
450g strong white flour
Drizzle of olive oil
1tsp salt
1 tsp sugar
75g raisins
1tbsp cinnamon
1 tsp dried yeast
275ml liquid (warm) - usually water, sometimes a mix of water and orange or apple juice, or milk and water.
Use dough cycle, once completed, knock back and place in loaf tin till risen again.
Cook at G7 for about 20-25 mins till hollow when tapped0
