Yesterday evening I made blueberry muffins - with the new Stork Baking Liquid which I bought cos it was on offer cheap in Mr A. Used their recipe for cherry and almond muffins that's on adverts in magazines at the moment. Replaced cherries with blueberries cos I had some going wrinkly and left out almond essence. Very quick and easy and yum! Also made sausage rolls with sausages that needed using and frozen puff pastry found in freezer clean out!

Sounds lovely.Which Fochabers recipe did you use in the end?I would also love to know how you make tiffin apple cake please. That's definitely a new one to me and sounds interesting.Surely not raw apples-as it's a raw cake?

    Thanks.

I used the recipe I found online. Actually it`s my bad grammar- should show tiffin and apple cake as separate items!

    Hi,

Finally got round to typing recipe. Reliable and yummy recipe.

    Apple cake

    5 oz marg/butter- melted
    2 large eggs
    8 oz caster sugar
    1 tsp almond essence
    1 tsp baking powder
8 oz Bramley apples – peeled, cored and sliced (can use more!) I use 3 large ones
    1 oz flaked almonds
    Demerara sugar.

    Grease a loose-bottomed round 8” (20cm) cake tin.
Put all ingredients except apples, almonds and demerara sugar in a mixing bowl. Mix well until smooth. Spread half this over the base of the tin. (Don’t be alarmed that there doesn’t seem to be enough- it will be and will envelope the mixture as it cooks)

Spoon prepared apple over and dot with remaining mixture. Sprinkle with almonds and demerara sugar.

Cook at 325F 160C or Gas 3 for about 1.5 hours until pale golden and shrinking away from the sides of the tin. Cool slightly before removing from tin.

Serve warm with cream or ice cream.

I just made chocolate brownies and then drizzled melted white chocolate over them. It doesn't look very artistic though, more a bit of a mess!

Yesterday I baked a loaf of brown bread from a new recipe (very tasty! Though I ran out of brown flour and made it half white so that might be why it was so good :rotfl:). I also made ten scones and froze them for later on as I'd just defrosted some home made lemon drizzle cake.

Not 'baking' as such, but since I also made a batch of soup for lunches, a roast dinner and a pot of stock later from the chicken bones, I feel I had a very OS day yesterday!

I still want to bake but I'm in work now, oh well, maybe make muffins tonight lol?

I made these on Sunday:a banana loaf and some almond bread. Thanks janb5 for the recipes.

The banana bread is lovely and not too sweet.

The almond bread could have done with 5 minutes less. They're a bit overdone but I followed the recipe instructions.Maybe they're supposed to be VERY crisp?!Oh well...:o

PS I'll try your apple cake recipe soon.Sounds really nice.Thanks.
