I forgot to post yesterday that I made chocolate orange Madeira cake yesterday (2 in loaf tins and a few buns - which I then iced and we all ate) following the old bero recipe:
125g butter
125g sugar
3 eggs beaten
200g flour
one cake was made substituting 25g flour for 25g cocoa and the other was a 40g substitution (orange is just 100g marmalade added after eggs but before flour / cocoa folded in. I have some loaf tin liners that I tend to use: keeps the cakes softer on the edges.DFW Nerd Club #545 Dealing With Our Debt

Hi all
I made some shortbread this evening, it turned out lovely:
225g butter
130g caster sugar
350g plain flour
plus caster sugar for sprinkling
Rub sugar and butter together, then work in flour lightly using fingertips. Continue mixing until it forms a dough. Grease very well (or use baking sheet) Shape into a round 1.5cm. !!!!! all over with a fork and mark into segments.
Bake for about 30mins 160 fan assisted, it may need longer. Until light golden brown. Allow to cool slightly before dusting with caster sugar.
Keeps well if in an airtight container.Proud to be dealing with my debts:jEver the optomist
