Does anyone have a really nice biscuit/cookie recipe? We have some, but they're never amazing and was just wondering if you wonderful people had any recipes you'd really recommend
Anything biscuit/cookie-ish is good!
I have made shortbread today and its gorgeous - still warm from the oven and i'm on my second piece
Easy recipe
6oz plain flour (if you have it, replace 1oz of the plain flour for 1oz cornflour as it improves the recipe)
4oz butter
2oz caster sugar
Rub the butter into the sugar and flour, then press into a sandwich tin, bake at about 180 for 30-40 mins depending on your oven.
Its so easy and quick, and tastes fab - I really ought to have doubled up the recipe0 -
JaneLiz, try this one (from my new favourite book):
4 oz butter
3 1/2 oz caster sugar
3 1/2 oz light brown sugar
1 egg
1 teaspoon vanilla extract
8 oz self raising flour
1/2 tsp salt
3 1/2 oz choc chips
Mix butter and sugars well then add egg and vanilla extract and mix well. Add Flour, salt and choc chips and then shape into log shape and pop dough in fridge for a couple of hours if poss (I only left it for half an hour and it was fine)
Cut into equal pieces (be aware they spread alot) and bake 180/Gas mark 4 for 7-8 minutes. You can do this with frozen dough but leave an extra 3-4 minutes.
