    Saturday morning = cooking in pyjamas!
    just a basic sponge cake in a square tin..chucked in choccy chips and plopped a blob of choc on the top with a smartie on each square...easy peesy :)
    ...now really should go get dressed! lol

    I've made mini xmas puds x4 with a little mixture left over for another 2 maybe and peanut butter cookies. Made 12 (ate 2 ooops) and got some mix in a tub in the fridge - anyone know if this can be ffozen??

    I am playing all of the right notes just not necessarily in the right order :D.

    today i have made a lamb casserole, a batch of bread rolls and some shortbread for the biscuit pot

    Orange Polenta Biscuits
    3 oz butter
    5 oz granulated sugar (plus extra for sprinkling)
    Zest of 1 orange
    1/2 tsp vanilla extract
    1 egg
    5 oz plain flour
    2 oz polenta

    Preheat the oven to 170ºC. Grease a couple of baking trays and line them with baking paper (these WILL stick, as I have discovered).

    Cream butter & sugar. Add orange zest and vanilla and beat in the egg. Add flour and polenta.

    Roll into balls the size of a walnut and place them on the baking tray spaced well apart (they will spread a bit). Flatten them out a bit with the back of a spoon - dip the spoon in cold water to stop it sticking. Sprinkle with granulated sugar and bake for 12 - 15 minutes. Cook on a wire rack.

    If anyone does make them, please let me know what you think of them :D

    Made them yesterday:) Saw some cheap oranges and remembered this recipe. Didn't have polenta but had out-of-date semolina.
    Couldn't roll the mix, it was sort of dry but sticky, I just used 2 spoons to dollop it out. But once I dipped a spoon in water it was easy to flatten and shape them with that. Made 22.
    Really scrummy and a nice change - we agreed they look and taste like very expensive French biscuits:)

    Apart from those, made a raisin loaf (bm) on Saturday, and a carrot cake yesterday. It's an old Delia recipe but heavily adapted. It's meant to go in a loaf tin but it goes further done in a square one. Obviously this one had grated orange rind in; also recipe uses 50g walnuts, had only 25g so tipped in the end of a bag of sultanas. Even had half a pack of cream cheese so made frosting with that & orange juice too.

    Glad you liked them! Sorry I should have phrased it a bit better, I didn't mean roll out with a rolling pin, I meant just scoop out little walnut-sized balls with your hands or a spoon or whatever. Trying to roll that sticky mess out would be a bit of a nightmare :D I'll have to try it with semolina and see if there's much difference.
