Done it...thinish cake ready to be marzipaned and iced in a few weeks

Disaster! I baked a chocolate cake yesterday for the OH birthday today. I covered it over with a view to covering it in ganache today and it's gone hard on the outside! Eek. Is there any way of salvaging it, should I cut the hard bits off or start again?0

I baked a Christmas cake but I think it's burnt. It said to bake it until a skewer came out clean and it never did. Now the fruit on top tastes burnt. Will the rest of it be burnt??

anyone know how often I am meant to drizzle it with brandy (the xmas cake that is...) one a week? once a fortnight? I have no idea! lol
also shall I leave it until a week before xmas to ice or should I do it before then?

You could always cut the top off,and then decorate with marzipan and icing to cover it.

I hate icing and marzipan! I'm making 4 (one for me & OH, one for my sister & her OH & toddler, one for my parents and one for OH's parents), so that first one will be mine.
I would say that I'd learn from my mistakes, but I'm pretty sure I did the same thing last year0 -
I used up the last of the 2 rolls of cookie dough I made last winter (24th Nov and 2nd Dec respectively) last night for cookies for the school cake sale. We did QC test them too, and they are fine (I have often ended up using rolls this long or longer later). And I used the leftover chocolate I had melted to make a dozen rice crispie buns, most of which also went to school.GC 2010 €6,000/ €5,897

I have a stew in slow cooker (trying to use up veggies from allotment), a chilli on stove and am about to make a butternut squash soup in pressure cooker. There will be enough for two meals in each dish so that will help with next week. I'm baking chicken legs for dinner with salad from allotment. I have to be in the mood to do all this and today was a good one.;)0

I found a piece of paper in a drawer today, with a recipe for orange polenta biscuits written on it (in my handwriting). I've no idea where it came from but it was probably from quite a while ago as it's written in lbs and oz, and lately I've been using grams.
Anyway I made a quick batch and they turned out so unexpectedly gorgeous that I'm going to post the recipe so you can all make some and share in the yumminess. Like I said I have no idea where I got the recipe so if anyone recognises it from a book let me know so I can remove it if necessary.
Orange Polenta Biscuits
3 oz butter
5 oz granulated sugar (plus extra for sprinkling)
Zest of 1 orange
1/2 tsp vanilla extract
1 egg
5 oz plain flour
2 oz polenta
Preheat the oven to 170ºC. Grease a couple of baking trays and line them with baking paper (these WILL stick, as I have discovered).
Cream butter & sugar. Add orange zest and vanilla and beat in the egg. Add flour and polenta.
Roll into balls the size of a walnut and place them on the baking tray spaced well apart (they will spread a bit). Flatten them out a bit with the back of a spoon - dip the spoon in cold water to stop it sticking. Sprinkle with granulated sugar and bake for 12 - 15 minutes. Cook on a wire rack.
