    I made some lovely date and banana cereal bars, first time of making anything like that but will be making more :)

    sorry i dont have a link its just a basic muffin recipe with coconut butter icing the recipe i use is this one
    muffin mix
    100g butter
    100g caster sugar
    2 eggs
    100g self raising flour
    4 heaped teaspoons of cocoa powder
    a splash of milk (i only add this if the eggs aren't big enough should look like a thick batter sort of consistency)
    1 teaspoon of vanilla extract`

    buttercream icing mix
    100g butter
    225g icing sugar
    desiccated coconut as much as you like but i love lots so i chuck as much as i can in
    if you have any you can add some coconut milk to it as well to make it easier to handle but i just use water if it needs softening up abit

    cream butter and sugar
    add eggs and vanilla extract
    add flour and cocoa powder
    mix well
    put into 8 muffin cases
    cook for around 15-20 minutes on 180 fan sorry don't know how this converts to other types
    leave to cool add butter icing

    sorry its not very technical i've tried to be precise but i sort of made them up as i went along they are really soft and moist and extremely moreish so i would say don't make them if you have a love of coconut and weak self control lol
  • Today I've baked a Self Saucing Chocolate Pudding which has like a zillion calories - and that's just looking at it in the bowl :rotfl: - but I've not made it for over a month, so I don't feel too guilty

    Also done a Regridgerator Cake topped with Chocolate, Weetabix Brownies, Cheese & Lentil Loaf :drool: and Cheese Scones, oh, and Barbeque Minced Pork & Spaghetti for tea

    i wouldn't like to say as cheese tends to go crumble and dry out abit once frozen i would bung 2-3 in the freezer then defrost and taste cant see the ingredients being a problem to freezer but i don't have a clue as to how they would come out after being defrosted.

    I don't see why not - they sound delicious!

    The Cheese & Lentil loaf I make has grated cheese, egg, milk and oats in (plus a few other things) and that freezes beautifully, but Pretz's idea is good, then you'll know for sure without risking the whole batch :)

  • Yesterday I baked an apricot and almond traybake

    It turned out surprisingly nice as I completely modified the recipe (got cold feet halfway through reading the qualtities and reduced the flour by 1/3), and forgot about it in the oven so it got a bit brown lol

    Mmmm might have a piece now
  • Baked my very first Dundee cake and it's turned out very nicely. The almonds on the top look quite posh:)

    I put a dash of port in with the fruit and it smells all Christmassy.

    The recipe was from an old book from the WI. I am working through the book trying as many as I can. So far, they seem idiot-proof

    I imagine you couldn't go too far wrong with WI recipes :D

    Having just spent three days with my inlaws eating ready meals and dying for some proper food, I've been home less than an hour and have made some cheese and black pepper scones (and scoffed two of them), got a batch of dough proving for bread rolls for tonight's dinner (which will be turkey burgers) and after a little sit down to watch last night's Masterchef The Professionals, I'm going to do some chocolate chip & orange shortbread for DH's biscuit drawer at work.

    Ooooh please can you share the recipe for this :o

    I am normally a believer that shortbread shouldnt be messed with (with the exception of maybe choc chips or cinnamon at xmas time) but that sounds lovley :D
