  • I made some little mini low fat lemon drizzle lemon curd sponge cake things :D

    I made a basic one egg sponge mix using Flora Light and the zest of one lemon, divided it in six holes of a muffin tin, baked it, made a lemon drizzle topping with the juice of the lemon and some golden caster sugar, put that on top, then when they were cool split them and filled them with lemon curd (bought stuff that I found in the cupboard). They turned out nice although I am tempted to eat the lot in one sitting and then then wouldn't be low fat anymore...

    I have just made some onion biscuits as a test to see a) what they tasted like and b) how long they would last (to see if we could make them and then take them to our Yorkshire Dales trip to have with some lovely Wensleydale).
    Anyhoo - they turned out more like odd-shaped scones rather than biscuits. Tasted very nice but they've nearly all been eaten, so the second part of my test may not come to fruition! :o

    We made buns today, with buttercream icing and sprinkles- DS helped!

    I took advantage of the fact that the oven was on (fish pie) to make some chocolate concrete. Goodness but it is dry!! Will add some booze, some raspberries that need using up and some custard on sunday and make trifle.

    Evening all

    Today I have made 2 doz maids of honour, lemon curd tarts and a weetabix cake/loaf. Will be making something tomorrow but haven't decided what yet!

    No knead bread.
    Delicious crisp crust and airy bread, but oh, I forgot to grease the pan so half the loaf is now stuck to the bottom of the pan soaking in water on the hob...

  • I've got Sticky Cinnamon Rolls in the oven at the moment and I've just covered two iced chocolate cakes I made yesterday and froze last night. I made double the cinnamon roll recipe and froze half of that too :)

    I have made Vanilla Cupcakes, which I have just frosted with the leftover frosting from the carrot cake my dh made yesterday! Yummy.
