In my slow cooker today.... part 2

In view of the Arctic conditions that are coming our way I thought it was time to re-stock the freezer with portions of soup. Overnight I left a huge pot of Lentil and Bacon on the go and it smelled delicious when I got up this morning. (I always buy Sainsbury's cooking bacon and recently the packs have been stuffed with tail-end pieces of ham and bacon. Perfect for chopping up for soup!)
Once that has cooled and been put in the freezer in portions, a pot full of Pea & Ham soup is going on. We'll be stocked up for lunches then for a while!"If you dream alone it will remain just a dream. But if we all dream together it will become reality"0 -

It was absolutely delicious. In the end I did it for 6 hours on high. I recon I got a lot more meat off it then I normally do as it was so easy to get off. I have been able to make 17 meals from it (roast, risotto, frittata and curry) and some lovely stock. Which works out at 33p per meal, we had rubber chicken all week.MFW 2015 #61: £838/£7838

Payday is on Wednesday (it has been a very long month). We have been using up everything in the fridge/freezer/cupboards.
I currently have a piece of gammon in the slow cooker, with apple juice, dregs of last night's pear cider, bayleaf, a few peppercorns, cloves and stick of cinnamon. Later on this afternoon I will remove, and roast it quickly in the oven drizzled in honey. Will serve with new potatoes and cauliflower cheese.
Hopefully, there will be leftovers for ham sandwiches for lunches this week.Cat :wave:0 -
Good tip - I'll try this instead of buying a ham hock I need to cook in the pressure cooker :T.
If you scrutinise the packs you can see which of them have the chunky end of roll pieces in!! By the way this is the chilled cooking bacon, not the frozen stuff which I bought once but never again - it was just a mixed up mush of chopped up fatty bacon!"If you dream alone it will remain just a dream. Do you have a recipe for the onions please? Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.0 -
Do you have a recipe for the onions please?
Spray slow cooker with frylight or similar. Slice up 4-5lbs onions and add to slow cooker. Drizzle over 2 tbsps olive oil and mix. Cook on high for anything between 4 - 12 hours (never done it before and big difference between various recipes).
House smells of em..... onions really :rotfl:.A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effortMortgage Balance = £0

Meatballs. Easiest thing in the world and they look like they have taken far more effort than they have!
I blitz half an onion in the food processor, chuck in half a crust of bread and blitz again. Then I put 450g of mince in with an egg and some mixed herbs and process it all together.
Then form the mixture into balls, put them in the slow cooker then I either add my own home made tomato sauce or if I am short of time I use a jar of pasta sauce.
Leave on slow and serve with pasta, salad and some crusty bread.0
