A lot of recipes are being added to the series section of the BBC web site. They are also including some of the recipes brought to the swap sessions.

My book came today and I was a little dissapointed to find that a lot of the recipes on the show are missing too and there are an awful lot of ethnic dishes which are not to my family's tasteBlessed are the cracked for they are the ones that let in the light

Please share the recipe for the vegan one as I can't have cows milk anymore
and I love milk tart /custard tart etc (Although I will have to save it as trying to lose xmas pounds!)
Sorry I didn't get back to doing this the other day - DH was using the computer to revise for his 17th edition exam (which he passed!), and I spent all day on Sunday stripping wallpaper off DD2's bedroom.
Anyway, here goes
Melktert
(I use a 7" deep loose-bottomed flan tin)
You can use shortcrust pastry, but this is the pastry recipe which was on the original
6oz/175g plain flour
1 tbs cornflour
1oz/25g icing sugar
4oz/100g margarine
Sift the dry ingredients, then rub in the margarine. It should form a dough, but if it's a bit too dry add a tiny amount of water. Tip it into your flan tin and press out evenly with your hands (mine tends not to be perfectly even :rotfl:). Cover and chill for 20 minutes. Preheat oven to 200c. !!!!! the pastry case all over with a fork, and bake blind for 10 minutes. Remove the baking beans and paper and bake for a further 5 minutes, or until it's cooked.
Filling
5 tbs cornflour
500ml milk (I use soya)
2 1/2 oz sugar
2 tsp vanilla essence
1 tbs margarine (optional)
Mix the cornflour with a little of the milk and sugar. Heat the rest of the milk until it's almost boiling then pour into the cornflour mixture and stir until thickened. Add the vanilla essence and margarine. Pour into the pastry case, sprinkle with cinnamon. Traditionally the milk is heated with a piece of naartje (or tangerine) peel, but I've tried this and it doesn't actually seem to make any difference to the flavour.
Essentially what it is is thick white custard in a pastry caseIt's yummy though! If you ever do decide to make a 'traditional' melktert it's far more faff than mine!
