    Jamie Oliver's 30 minute oozy mushroom risotto

    This was really quite easy to make-zapping the porcini in with the onions and celery is an insipred action I have to say-you get the richness of flavour, without the faff of soaking them, and I liked just using the kettle rather than having an extra saucepan of stock bubbling away (I admit I used stock cubes-I never seem to have enough home made stock for the recipes I want!)
    I only had portobella and chestnut mushrooms but they were lovely grilled, and I was pretty short of thyme (my herb patch seems to have died boo hoo-need to get more thyme, I feel lost without the ability to throw handfuls into my food...

    Really nice, easy risotto, big success :D

    Its gorgeous you're right so much less hassle :T
  • Just found this thread and think it's a great idea. Just found a recipe for butternut squash and sweet potato casserole which I am going to try tomorrow or Saturday.

    Must have about 150 cook books (I am an avid collector) so won't be short of things to try.

    Nothing to report for today (how bad am I at my own challenge :o) off to a carvery lunch today so will be full as a full person - tomorrow however is an opportunity for new and exciting

    For two adults (and a 5 year old):

    One onion, finely chopped
    A load (technical term!) of mushrooms (i used around 7)
    A red pepper, sliced
    150g risotto rice
    600ml chicken stock
    Garlic to taste
    Two fillets of smoked haddock

    In a large saucepan, Gently fry the onion, mushroom and pepper in the garlic, i used a few sprays of fry-light oil
    Add the risotto rice and coat in the garlic and onion mix
    Add a small amount of the stock at a time. Keep the mixture on a low heat (i use gas cooker). The rice will absorb the stock.
    Repeat the last step until all the stock has been used. Once all the stock has been used, continue simmering for a good 20 minutes or until the rice is completely soft. Make sure you hover near it, otherwise it's quite easy to burn.
    I cheated and steamed the haddock in the microwave, then flaked and added to the risotto before the end of cooking time.

    I'm thinking you should be able to use whatever veg and meat/fish you have left lying around. For veggies subsitute chicken stock for veggie stock. I made another one for my OH who doesn't like fish by using bacon offcuts, I cooked the cubed bacon seperately and added before the end of the cooking time.

    Some receipes use white wine as well as stock but we are quite common we don't have wine in the house :)
