This week I made a spring fish pie http://www.bbcgoodfood.com/recipes/2235/spring-fish-pie . Basically it was spinach, egg, a mix of salmon, haddock and cod, with a bit of creme fraiche and lemon juice and then topped with smashed new potatoes. I found it quite bland to be trueful, so won't be making it. It was my first every fish pie, as I'd never even tried it before. Lots of people love fish pies so maybe I'll have to have a look round for a better recipe and give it a go again!Mortgage-free wannabe 2025 £571/30000

Hi all, haven't been able to offer much just lately as we have been practicing hard every day for our ballroom dance competitions. However, here is my latest offering, Butternut Squash Risotto, a variation on a recipe from the Delicious magazine.
Ingredients- 250g Butternut Squash
- 1 stick Celery
- 1 medium Carrot
- 500ml stock
- 1 medium Onion
- 2 cloves Garlic
- 80g Arborio Rice
- 125ml White Wine
- 50g Parmasan Cheese
- 30ml Olive Oil
- Dice the Butternut Squash, Celery and Carrot then fry then in a little olive oil until they are slightly coloured.
- Add the stock, bring to the boil and simmer until softened, about 10-20 minutes.
- Put the vegetables and stock in a blender and blitz to a puree. Pour the puree through a strainer into a clean saucepan and keep warm.
- In a heavy based pan sweat the chopped onions in a little oil for about 10 minutes.
- Add the Arborio Rice and stir until all of the grains are coated with the oil.
- Add the finely chopped or grated garlic and white wine, stir until evaporated.
- Start adding the puree, a ladleful at a time, stirring until it has been absorbed before you add another ladleful of puree. After about 20 minutes, all the puree will have been absorbed and the rice will be creamy but still have a little bite.
- Add the grated parmasan cheese and fold into the rice.
- Allow to stand for two minutes and the serve straight away.

I found a recipe for Ginger sauce..it was GORGEOUS! I`ve used it with pork and white fish and with chicken leftovers, plus whatever veggie bits to hand at the time, served with rice, with pasta, and with steamed potatoes, and it`s worked lovely!
Milk & cornflour basic white sauce, mix and set side.
Half an onion very finely chopped (red onion gives sauce a lovely toffee colour, if you have it to use up)
Grated fresh ginger (could use lazy ginger option?)
Soften onion & ginger in either olive oil, butter, whatever.
Mix onion/ginger into white sauce.
Sounds strange, ginger in a milk-based sauce, but it really works!0 -

Me again! A review of March's new recipes first: -
- Pea pakora pockets - was a bit worried these wouldn't work as when defrosted, they were really wet, but they tasted lovely!
- Red pepper, mozzarella and spinach melts (going to use a bagel) didn't make - will do in April
- Pasta with spicy sausage and cream - the sauce was really nice (and simple) but I don't think I like chorizo which put me off it...at least I tried!
- Fragrant pork and rice one-pot - didn't make - will do in April
- Chicken laksa - recipe from a book I can't remember the name of - absolutely gorgeous! Really filling and tasted delicious. I'll definitely make this again
- Maple & pepper-glazed chicken with roasted carrots - had this last night and used honey instead of maple syrup and no vinegar. The sauce was lovely (I don't like honey and it smelled really strongly of it, but it was ok once 'cooked') The carrots shrivelled up to almost nothing though!!
- Chicken with creamy pesto and broad beans
- Red pepper, mozzarella and spinach melt
- Spicy vegetable meatballs with pasta - using leftover mixture from burgers
- Spice chicken with rice and crisp red onions
- Fragrant pork and rice one pot
- Corn and shrimp cakes (serving with rice?)

Didn't make anything new last week but for this week I made Jamaican Jerk Tilapia Packets http://bbq.about.com/od/fishseafoodrecipes/r/bl60319b.htm. These were lovely and the fish was not at all dry. For the OH i took his out of the foil after 10 minutes so that they could go crispy. Also i baked not grilled them.MFW 2016 No 68 £1300/£8500 No new toiletries Cook sth different0

Today I made my first white sauce (for Lasagna). Basic I know but I've never done it myself before. I used to just use a jar. I also made chocolate mousse for the first time and it turned out well:-
Recipe (for 2)
130g Chocolate (I used sainsburys basics and it was ok)
2 tbs milk
2 tbs coco powder
2 large egg whites (whipped into peaks)
Melt the milk, chocolate and coco powder together. Let it cool and little and add a quarter of the egg whites to loosen the mixture before folding in the rest of it. Put in glasses and chill.2013 Free Money - £363.44 Topcashback
