  • I think something simple like this may be the way to start. What would you suggest serving it with? Just new potatoes and a bit of veg maybe?

    Salmon is great, I always keep a few fillets in the freezer for handiness. Tonight I had a bit of an emergency when some pork chops got horribly burnt (but I have whinged enough about my horrid oven lately!) so I cooked a salmon fillet for myself in the microwave because I needed something quick as the spuds and veg were already done. Three and a half minutes is all it needed and with a knob of butter, squeeze of lemon and a sprinkle of dill it was lovely.

    DH ate the burnt pork chops anywa and proclaimed they were lovely and crispy!

    i did my lot a black bean chilli today, was in the good food magazine this month.
    Kuids liked it but hubby said it was more sweet than hot, so will modify if i do it again.

    ok im in on this any excuse really to sit and flick through my collection of recipe books lol, i shall have a look through in the morning once i get back from school run then i will update. Although i did make a lasakka the other day only because i added the wrong tinned tomatoes from my hamper i got but i liked it and hubby will eat anything so no worries about new recipes, however DD will eat nothing other then mac and cheese

  • don't know if this counts its probably a store cupboard challenge message but it was different to me.
    on sunday we had sunday dinner and my dd ask if we had any pudding i have nothing in need to go shopping so i chopped to apples and put them in a baking tin (maybe should of been my casserole dish but that was in use) then added some sultanes and some sweetner and some cinnamon and i had some batter left from the yorkshire puddings so tipped this in to. and cooked it. it was so yummy we had it with creram cause i have no custard but would of been great with custard.

    Some lovely ideas in this thread - will be watching and trying to join in. I too have major fixation on cookery books, and when we had our extension and new kitchen (after 10 years of wanting it !), I now have a whole wall cupboard devoted to them - bliss.

    However, I don't truly use the majority of them, so will be trying to 'thin' them out a bit, with the help of this challenge, methinks.

    Saw a tip I might use - every time you use a recipe from one of your cookery books, put a bookmark / post it or whatever to flag up that book and page. At the end of a couple of months (or whatever timescale is appropriate) you should be able to see exactly which books are being used regularly. Then you can either pass on / sell / recycle the unused ones - or make a real effort to try ones from the 'unloved' books before finally giving in and giving away !

    Printed a lovely 'spanish meatloaf' recipe off the Old Style index which I might adapt and use today - uses mince and some pork sausagemeat I've got leftover from Christmas, and is done in the slow cooker. Will let you know how my attempt works out ! Also might do a HM cream of tomato soup I tried the other day which worked out really well (dd2 loved it and came back for seconds).:T

    I will join please got lots of new cook books for xmas. Will make mine towards end of week as backshift next couple days so will be making some of my staples to take to work. sheppards pie and cajun chicken pasta. Will have a browse tonight and deciede what my new dish will be.

  • I used the recipe from Levi Roots book last night for dinner it was Chicken Kickbabs, it was great, we had enough of the jerk coated chicken left for chicken baguettes at lunch today and I'm sure we will cook this again. I am planning to try the cornish pasties from the hairy bikers cookbook next weekend (OH choice).

  • As the children and I are all at home today, I hadn't planned a meal, and awaited inspiration :o I'm making this vegetarian gratin for supper (I wanted something meat-free after the Festive Excesses ;) ). I've used veg from the garden that DH dug yesterday, and was more than we needed :T

    I'll report back later to say how we liked it :D

    I've really enjoyed looking back through cookery books, too!

    I made pork medallions with sauted apple last night. The pork was cooked in cider (leftover as hubby found it was bubbly) and the sauce was finished with half-fat creme fraiche and mustard. We had it with little boiled anya potatoes and some roasted sweet potato & carrots. Pretty successful - OH thought it was nice and tasty, and didn't miss the fattiness.
