I found the recipe for Baileys Chocolate truffles in a Christmas receipe book that said to use rum, whisky or brandy, but I didn't have any of them, so used Baileys instead. It seemed to work just fine.
Recipe as follows:
125g Dark Cooking chocolate broken into pieces
2 tbsp Baileys
40g unsalted butter, diced
55g icing sugar
Galaxy hot chocolate powder for dusting
The recipe also said to add 55g of ground almonds, but I left these out as I wasn't sure if anyone would have a nut allergy.
Melt the chocolate in a bowl over a saucepan of simmering water, don't let the base of the bowl touch the water.
Remove from the heat, stir in the baileys and leave to cool slightly.
Beat in butter, sugar (and almonds) until thoroughly combined.
Shape mixture into 18 small balls and place on sheet of baking paper.
Sift galaxy hot chocolate onto plate and roll each ball in cocoa to coat.
Place back on baking paper to set.
I put mine in the fridge as I didn't have much time for them to set. They were only in for about an hour.
Store them in a airtight container if they last that long!!Projects made for craft fair - 40

Did some shopping today, Lidl, Tesco and the Coop, to get all we needed. Plenty in though now, and so it will be small shops for rest of month (final words lol). Also made HM meringues (had with the rasps I got reduced to 70p from £2.00 in the Coop) and HM banana cake, as well as HM pasta bake (using LO chicken breast and whoopsied pepper from todays shop).
Meal planning is on a day or two before basis for now, and using up some freezer stuff hopefully. Tomorrow is roast pork and will be too much for us 3 so wondered if anyone had nice recipes for leftover pork, other than stroganoff ? thanks.Ermutigung wirkt immer besser als Verurteilung.

OK...please count me in.
Every time I try this I either give up or fail miserably. Well 2010 is going to be a new start for me and a change is needed.
So far I have spent nothing. OH has not had any work for 3 weeks and he has nothing sorted out for the coming week either (self employed carpenter:rolleyes:) so we don't have any money. Really worried about it tbh but trying not to get stressed. I have paid the mortgage out of my wages and most of the other 'major' outgoings so we'll just have to see.
There are 2 adults and 3 children (1 of which eats adult sized portions). We also have 2 cats and 2 dogs. I'm Aiming for £380. I know this is high but I've got to be realistic and start somewhere.
Tomorrow we are going to my mum's for tea so that's sorted and I've got a few bits in the freezer so that should see us through to the middle of next week so here goes...0 -
First spend of 2010, got flea and worm treatments for my cat for the whole year, £40.66 from p*tmeds ( 5% discount till tomorrow) and expecting about £2 cashback from qu*dco. That was much less than expected, so I'm saving already :j
Welcome to all the new frugalers - you'll find this thread one of the friendliest and most useful on the site, it's been an inspiration to me the past 2 years.
