As well as doubling it up if it is too thin, you can also carefully split it into two to make it thinner. If you pull from one corner and go slowly, it might need a little help here and there, but it will split.
I would suggest cutting roughly to size first though as it is easier to split a smaller piece.0 -

Would i be able to sew it by hand and use old clothes like jeans to make it? Or would i need to buy decent material and use a sewing machine?
And does anyone have any instructions for something like this?

Not exactly what your looking for, but still a nice little organiser for your bag!
I have just made a couple of those organisers and they worked out well.
I made mine a little taller. I used a piece of fabric 28" x 11" and folded up about 3.5" to make the pockets.
I also used a piece of heavyweight interfacing on both pieces of fabric, so the organiser stands up on its own and helps give the bag some shape.0 -
