    Actually I always think how yummy and varied your meal plans sound, especially since you are catering for one.
    I get the feeling one of your secrets is batch cooking esp. the casseroles.
    Thanks Crafty :D Batch cooking is the ONLY way I can eat healthily while cooking for one. When work was less pressured I was very good about doing stir-fries pretty much every evening, but it just doesn't seem to work anymore. Lunch today has been lentil & spinach soup; crackers, pate (needs eating up...) and beetroot. I know I need to eat more fresh/green veg, but am really not that excited by salad right now, so will try to cook it into my meals.

    Freezer is now full, so need to do the meal planning so I know what needs to come out - and will cook the odd thing to add too. I want to make a sweet potato, red lentil & ginger soup, parsnip soup and carrot soup. I've located roast veg (potatoes, beetroot, pumpkin) in the freezer which should be eaten soon too. So this week will be about eating lots of fresh stuff and freezing extra portions for later in the month. Second batch of stock is on, and beans are cooking for another soup. Sausage & split pea casserole also being made, so that's tonight's supper sorted out. I may need to get a cold bag and some ice-packs out though... or get people over to help me eat some of the stuff during the week.

    I also need to decide what to feed people next weekend.

    Fan is now safely stored in the shed, and the christmas tree is down and cluttering up the garden. Decs are on their way to the chest of drawers in the spare room.
