I was thrilled to see this recipe, will have ago this weeked. My youngest has an egg allergy and it is so hard to find cake recipes without using eggs. Does anyone have any more - like this?0

Made this the other day, but I made it with those cheapo fake lidl weetabix. They seemed a bit small so used three....turned out perfectly. have tried this three times now, and its defeated me, doesnt even slightly rise, its like a brick and is either undercooked or so 'well cooked' its charcoal..! (ok, slight exaggeration)..think it'll just stick to muffins!Budget for Jan/Feb £240 per 4 weeks

I've just made this and it's in the oven.
I added a sachet of hot chocolate and a pinch of cinammon and ground ginger as I didn't have any mixed spice.
I've got Tesco value weetabix and theyare small so I put in three and some crumbs. They were fine in the brownie recipe so hoping they will be as good in this one.0 -

Mmmmmm Just made one of these, in fact this is the second one - I did one the other day.
We haven't got any sultanas or dried fruit, but chocolate chips in equal quantities work great

Thanks for this delicious cake recipe.
I'd bought some weetabix and the kids wouldn't eat it, can't say I blame them:rolleyes: so ds2 age 9 made the cake in about 2 mins.
Best thing though is that it has no eggs so my egg-allergic dd can have it - and no fat either:D brilliant ! Will try it with other dried fruit and choc chips.0 -

Just sent OH out to get some shopping and some weetabix...... and he has come back with Weetabix minis :rolleyes: They already contain currants and nuts, but main problem is that the are so much smaller than the usual ones! Does anybody think I can still use them for the cake recipe and how do I go about adapting it. Maybe someone could weigh normal weetabix for me? Hope somene can help....
