I've got half a tub of ricotta which I opened on Sunday. Is it still OK to use it, and if so, what can I make?! I'm wheat intolerant, so pasta & cheescake is out - boo hiss. Ta!0

You can make a crustless flan - sweet or savoury- gnocchi, make a cheesecake with gluten free flour, (Doves is good), add it to a pasta sauce - gluten free of course, or a make a dip. Yum!NSD 0/150

Mix it with pesto and stuff a chicken breast with it - OHs fave meal!
I know this is no help but if there is any of the mix left over I stir it through pasta for his lunches too.:staradmin0 -
stir in some sugar and a bit of milk if you want it more pourable and serve over fruit if you want a sweet version. My lot like it with hot chocolate powder made up with a tiny bit of hot water, cooled and mixed in and served over strawberries.0

Bought some ricotta cheese last week-end, not sure why but haven't a clue what to use it for, can I freeze it instead of letting it go to waste.
Also any recipes would be appreciated.

And it's great in loads of things. Goes brilliantly with spinach in lasagne... don't have a recipe to hand but I'm sure plenty of people will have suggestions.0 -

There is a thread about ricotta here which should offer plenty of suggestions.
Also what about Delias baked risotto carbonara? or Spinach and ricotta
lasagne?

You can add it to homemade tomato sauce, with mozarella if you have it. Served over pasta or gnocci with lots of garlic bread0

I have 375g of ricotta cheese to use up in the next few days. Does anyone have any cheap ( veggie) recipes either sweet or savory?

The first thing that springs to mind is spinach and ricotta lasagne or canelloni as ricotta goes really well with pasta. I am sure we have a thread with recipes. Yes we do.
