It's made in oblong moulds when it's made by a craftsman cf industrial supermarket ricotta. I love it - like cottage cheese nutritionally but delicious!
I think originally (like in ye olden days), it was made in baskets and had the imprint of the weave on it. Baskets are less hard-wearing than a plastic (i imahine0 mould though.)0 -
My DH always stuffs his chicken breasts with ricotta, mix in what ever herbs you have to hand , tyme, rosemary etc. delicious.

Hallo, I am Italian and this is the first time I write on this forum. I am just a little bit embarassed because of my bad English...
By the way, in Italy we use ricotta mainly for cooking. But I personally LOVE eating it as a cheese.
Traditionally we use ricotta for quiches (together with spinach), for filling parma ham rolls or bresaola rolls, for pasta sauce (delicious with a basic tomato sauc) or for some cakes.
I have never heard of ricotta stuffed in the chicken because you can not cook ricotta.

Interesting recipe on "Ready Steady Cook" this afternoon - chicken breast - incision made - stuffed with cheese (OK, stilton, not ricotta) - wrapped in cling film - then boiled "in the bag". Proper recipe should be on the website for a while.The acquisition of wealth is no longer the driving force in my life.0

I've tried stuffing chicken with ricotta but found it all sort of disappeared.
I love it with spinach and chorizo salad or mixed through warm pasta with a little olive oil, black pepper and spinach.0 -

Hi there! I'd mix it with spinach, seasn with nutmeg, and use as a sauce for pasta

I make a spinach and ricotta flan - mix the tub of ricotta with a bag of spinach that's been cooked off in the microwave. Add an egg and some parmesan cheese and pour the lot into a shortcrust pastry flan. Bake in the oven for about 25 - 30 minutes and serve with some salad.0
