Ricotta Cheese....

Just found a tub of the above lurking at the back of the fridge, use by date is tomorrow. I don't recall buying it, assume son picked it up for some reason, he's not around to ask. Is there any recipe that I can use it for? Can it be used in a desert as I pretty much have tonight and tomorrow sorted meal-wise. Or maybe a sauce I could haev with pork or chicken?

    i too need to use up some ricotta ! im having it in a spinach / ricotta lasagne with salad / crusty bread though

    ive used it in a sauce before with red onions / mushrooms / pancetta and a bit of creme fraiche

    not used it in a dessert but try looking on http://www.bbc.co.uk/food/

    I used some to make a baked banana cheesecake yesterday, its ok but it was a bit of a palava to make & not nice enough to go through that trouble for again!

    freeze it and then you can use it with a recipe that you really need it for.

    I didn't know you could freeze it. That's helpful. I used it on spinach and ricotta pizza and dolloped some on top of salad but didn't know how to use it all up.

    It will freeze fine for about 6 months. Defrost it in the fridge overnight, there will probably be a separation, but just mix the liquid back through the cheese before using.

  • I want to make a soup tonight and I have a tub of ricotta in the fridge....

    I wondered if I could make a 'Cream of Mushroom' type soup with it...?

    Thing is I don't know whether is will work, or will it curdle or anything?

    I was planning on sweating a couple of onions and some mushrooms in a tad of oil, adding a little vegetable stock, then when ready to serve, adding the ricotta....

    Do you think it will be alright...?

    I'm hoping that all you lovely people will be able to come up with some suggestions on how to use half a tub of ricotta cheese.
    I've got a 250g tub and I'm going to use half of it tonight in a spinach and ricotta open ravioli.
    Any suggestions on how I can use up the rest of it? And how long will it keep once it's been opened?
