I froze some, used it yesterday in spinach and ricotta tagliatelli, and it was fine.

  • How about Smoked Mackerel pate? Fish, ricotta, cream, squeeze of lemon, grated nutmeg, salt, pepper. Whizz in a food processor, chill, eat with hot buttered toast.

you can sweeten it and add some milk and cocoa powder and a splash of rum.
It becomes a delicious chocolate dessert

  • the Italian man at the market offered me a taste of ricotta - it was gorgeous and melt in the mouth so of course I bought a wedge:rotfl:

Now though I am not sure what to do with it:o I have a recipe that mixes feta and spinach and you stuff a chicken breast with it. Do you think this would work with ricotta?

    Does it cook well?

    thanks for any advice!
  • ricotta is the italian version of cottage cheese...... usually in a tub, not a wedge. You can stuff it in chicken, if that's what you've got, and it sounds like you could still do that even if that's what you haven't got!
