I froze some, used it yesterday in spinach and ricotta tagliatelli, and it was fine.

How about Smoked Mackerel pate? Fish, ricotta, cream, squeeze of lemon, grated nutmeg, salt, pepper. Whizz in a food processor, chill, eat with hot buttered toast.0

the Italian man at the market offered me a taste of ricotta - it was gorgeous and melt in the mouth so of course I bought a wedge:rotfl:
Now though I am not sure what to do with it:o I have a recipe that mixes feta and spinach and you stuff a chicken breast with it. Do you think this would work with ricotta?
Does it cook well?

ricotta is the italian version of cottage cheese...... usually in a tub, not a wedge. You can stuff it in chicken, if that's what you've got, and it sounds like you could still do that even if that's what you haven't got!0
