Lasagne tips... Spinach and Ricotta

Hello!
I frequently make normal, bolognaisey lasagne's, but I want to make a spinach and ricotta one, maybe with a layer of mushrooms. Saw Delia had a recipe with pinenuts...
but anyway. Has anyone make spinach and ricotta lasagna before? Would a layer of msush and onion be nice, maybe with a layer of tomato? or would the tomato be too overpowering? I figured mush, spinach and ricotta, cheese sauce....

Sounds good to me. I love veggie lasagna. Delia's spinach and ricotta recipe is excellent, but you could easily adapt it to what you've got in the fridge.0

I've just prepared a spinach lasagne with a recipe from this board.

1 onion and 8oz mushrooms fried in olive oil until soft and add a can of chopped tomatoes. Place in an ovenproof dish cover with a layer of lasagne sheets.
On top of this add 12oz of cottage cheese and place another layer of lasagne sheets on top. Gently wilt the spinach and season with nutmeg and cover the lasagne. Arrange grated cheese and sliced tomatoes on top.

Haha! same here. I mixed the spinach, ricotta and nutmeg, made a cheese sauce base and top and added one layer of softened toms, mush and onions. Was rather good. Quite chuffed with myself. Thank you all! x0

These all sound delicious. I've got some ricotta cheese and spinach in the freezer, was planning a canneloni but might now make a lasagne with the mushroom and tomato sauce as well, thanks.

Hi all,
I really want to make a basic spinach & ricotta pasta sauce tonight, and have searched the net and these forums, but everything I'm coming up with is either for a filling for canelloni / tortellini or for lasagne.
Basically, I want to cook some fusilli, and then stir in a yummy, creamy, cheesy spinach sauce (and possibly bake if necessary). Other veg like onions are welcome in it too!
Can anyone help?! Also, I'm just cooking this for one tonight (have been abandoned by OH for the weekend), so I need to be able to make the sauce in a smallish quantity.

you can make a basic, white sauce and add chopped spinach, ricotta, parmesan cheese and nutmeg.
You can also omit the white sauce, just stir the ricotta with a little wam water or milk to soften and add the other ingredients.
Bake if you wish.0 -
HOnestly Sqeaky; I have searched but although I can find mention of it as a signature dish and a great way to use up spinach I can't find a recipe! BBC food has let me down and I have lent the recipe book with it in to my Mum - as I want to make it as a surprise for my mum I can't ask for the book back.
Anyone help? I am confused as to whether you cook the spinach and ricotta together or layer them and if you should then do a cheese or a tomato sauce over the top. I do lasagne from scratch a lot (except I buy the pasta!) but need a veggie dish for a party; my mum loves this when we go out.
