  • I find scones very difficult to make, they always come out hard and flat.
    If it was me I would do jam tarts.

    how about manchester tart? Line a tin with pastry, blind bake then once cool spread with Jam, then sliced bananas the top with you made-up birds custard. Delish!!!

    I find scones very difficult to make, they always come out hard and flat.
    If it was me I would do jam tarts.

    my scones were hard and flat too - then I found where i was going wrong:

    using self raising instead of plain flour and baking powder
    not adding enough milk ( I thought it should be like pastry - but when i experimented with plain flour as i was out of SR - I accidentally added too much milk! but not wanting to waste all that butter etc I patted it out cut out the rounds and cooked them - and viola! success at last!!! they were really gorgeous - and I always do them this way now!

    so are you saying use plain flour instead of SR? <thicko icon> I hope so because I'm never really sure about what is SR and what's not in France x

  • Thank you - I would have done jelly with cake in, custard and cream on top .... but I'm no trifle expert!

    Do you just have cake/sponge then custard?

    I don't now how the notion of Jelly came about - probably a certain trifle manufacturer! -

    Anyway, all you need to do is soak something into the cake, or sponges - like sherry or brandy for adults, or the juice from the fruit - works well when using tinned fruit. The possibilites are endless, then as you say, just pile the custard and cream on top.
