ps: I think I'm going to go for scones and jam as thinking about it has made me crave a cream tea
and seems to be easiest (lazy? moi?) and cheapest option as I have a jar of homemade jam already (tight? moi?!)

Just to bring mince pies back into the mix - you can 'refresh' shop bought mincemeat by adding any or all of:
grated rind of an orange
juice of half an orange
2 tablespoons of brandy or sherry
1 finely chopped apple (peeled and cored)
1 teaspoon ground mixed spice
Just empty the jar of mince meat into a bowl and mix in your chosen addition (s).
Leave for a couple of hours or overnight before using so the flavours can blend and mature0 -
Also, for trifle without jelly,
sprinkle sponges with sherry or orange juice
pour over lightly stewed (like for 5 mins just to get the juices flowing) raspberries or strawberries (or if you put the fruit and sugar in a bowl in the oven to warm up and when the juices flow stir to dissolve sugar and leave to cool)
When cool on goes the custard (real egg custard if you're going for it)
Then the whipped cream
This is kind of the grown up version.
For children's parties we used to have fruit in jelly with a blob of cream on top made and served in a cardboard/paper individual dish0 -
I also love the trifle idea, very good, and i bet they would look sooooo sweet.
I would probally suggest something like a millionare shortcake aswell as you could do a huge one and then cut it up in to 25 portions making your life a little easier

ty norman bean! scones are a great idea - but now you got me craving a cornish cream tea!!! got the bug when on holiday in cornwall this year. discovered where i had been going wrong with scones and my last batch - even my Oh said were best he had ever had - especially as my local Aldi sell clotted cream from a farm next door to where we stayed in Cornwall! jeez i do ramble on..........sorry!0

I'm part (well, mostly) French, in fact just next door to where you are and when I went back to Brittany to teach English, my kids were obsessed with any kind of sponge cake or pudding. Especially anything with jam.
