  • How can I make two sausages into a meal for 2? Usually I make a pasta sauce and chop into that, but getting a bit bored with it.

    (Buying pack of 6 between 2 people, we always end up with 2 odd ones, would like to use for a meal rather than save up till next time as trying to get away from our weekend fry up brekkies!)

    Sausage Rolls maybe - I use half a sheet of ready rolled puff pastry and finely chop and fry an onion (red can be nice) once softened lay on some kitchen towel to cool and drain off most of the fat.

    Take the skin off your sausages, mix in a bowl with the cooled onion and handful of breadcrumbs. Dampen your hands slightly and take half of the mixture, form into a sausage shape the length of the pastry. Roll & seal the pastry, cut to preferred size, brush with milk/egg wash and bake at about 180/200c for 25/30 mins until golden brown.

    You could probably get about 6 average sized sausage rolls with this amount - I often make mini ones that can be used for packed lunches or frozen.

    Just reduce the other ingredients a bit to match in with the weight of your two sausages.

    Any recipe for sausagemeat stuffing, and make into little patties or balls.

    Have 1 1/2 sausages each for your brekkie, and you have 3 left for the following weekend! :p
  • Slice the sausage up after cooking and mix into a batter with eggs, any other veggies you have (par-cooked if raw to start with)- tatties work well, as do peppers and onions and make a sausage fritata.

    How about adding it to a curry? will cook quickly and give you one of your 5 a day

    I'm love spinach raw in a salad, even better mixed with rocket, but don't suppose that's what you are looking for. :o

    Others have suggested curry, cannelloni (or lasagne) and quiche which would be my first suggestions.

    Mushroom, cheese and spinach crepes, which is one of my absolute favourites.
    Recipe below is similar to the way I make it, although I use Greek yoghourt instead of creme fraiche and add some grated cheese. You could always add some chopped bacon if you don't want to be without meat.

    What about adding to a pot of veg soup. If you really don't like the texture when cooked, give it a whizz through with a blender.

    Bubble and squeak, spiced up a bit. You can portion up and freeze what you don't use.
