    I like to make cheesy veggie pie, it's a bit like veg shepherds pie.

    Boil potatoes and sweet potatoes to make mash.
    Slice / chop celery, onion, carrots and mushrooms if you have them.
    Soften in oil then mix in a tin of baked beans and season with herbs and S&P.
    Pour the mixture into a deep oven proof dish.
    Make mash and grate cheese into it.
    Top the bean mix with the cheesy mash and then bake until browned on top.

    Do you have any space in your freezer?

    Its just in September we had a cracking challenge on the MG Matrix thread to come up with "30 Soups in September"

    We cooked veggie soup base, stock and tomato sauces and froze them in teeny portions, then made a different soup every day using leftovers and bits and bobs from our cupboards.

    I ate for a whole month for "nothing" lost 3lbs and saved a tenner each week from my already miniscule food budget - was a great start to my Christmas fund.

  • I absolutely CANNOT live hand to mouth. I cannot run down supplies to replenish them. I hate going without. I prefer a comfy cushion of provision bolstered by fruit veg milk and other essentials meaning cupboard items comes into true use.

  • Hi gals and guys are you ready for my list of cupboard items? It's a long one btw! I really need to use this up because I am just continuing to buy daily the meal I fancy. Also I buy my meat from the butchers on the day so this can be included in any meal ideas. Feeding 2 adults and 2 kidlets aged 8 and 4.
    Hope you can help me...here we go...

    Various packs of instant noodles
    Lemon coriander cous cous
    Roast veg cous cous
    Loads of pasta shapes, rice and spaghetti
    Enchilada kit
    Fajita sauce
    Stuffing mix
    2 tins baked beans
    1 white sauce mix
    Chilli mix
    tin of small potatoes
    3 tins of tuna
    Potatoes, leeks, carrots, mushrooms, tomatoes and onions
    3 eggs but I don't know if these have gone off

    So some ideas from me is to make a chilli including a tin of beans, some mushrooms and tomatoes? To use the enchilada kit. Maybe make some sort of soup?

    I opened thr fridge yesterday in preparation for my weekly shop and thought to myself "Not a lot in there, need a big shop but before I go I'll clean the fridge out".

    Which turned into a big lets see what I can make with what I have:D.

    So yesterday I made:-

    Spicy meatballs - using half a pack of mince I had, some soft tomatoes for the sauce and some potatoes for the mash
    Shepherds pie - using the rest of the mince, potatoes and a sad looking carrot
    Vegetable soup - leek, potatoe, carrot, celery, parsnip, tin of tomatoes, onion
    Mushroom Soup - some very sad looking mushrooms
    Roasted red pepper and tomato soup - 1/2 shrivelled red pepper, soft tomatoes, garlic and onion.


    So my big shop turned into a very small shop of some cream (bought two cartons of whoopsied - needed some for the soup, the rest I'm going to make butter with, and then in turn use for making scones and cakes), milk and coffee:T:T

    I have some Wrights bread mix (from the recent "sale") which I'll use to accompany the soups, some baked beans to go with the shepherds pie.

    Next I'm going to tackle my freezer:eek:

    I know you good guys on here will see nothing extraordinary in this, but for me it was excellent..... a new me for the new year.

  • Well done, I know how you feel, new year res to not throw away food and only buy what I need, normally I spend a fortune on food and throw half of it away! On 2nd Jan i went through my 2 freezers (more room to store food we don't eat) and found enough food to make 22 meals, I couldn't quite believe it! I then made a meal plan for the next few weeks and have only had to buy fresh stuff such as milk and fruit. I'm hoping that coming on here will help with my motivation and seeing your ideas for veg past it's best has helped so thanks!:)
