    I posted this as a thread originally because I didn't see a store cupboard thread, but the sticky thread led me here. Hi there!

    I need to stretch my money this month, so I wanted to batch cook and freeze to make the most of what I have in the house as well as save money on those ill-affordable 'i'm tired, have a takeout' days.

    I've tried to google/read other threads here about batch cooking, but there are so many ideas and I get overwhelmed easily looking at them all! I have the following things:

    1 whole chicken
    1 pack of bacon
    1 500g pack of mince

    Plenty of rice and pasta
    500g of cous cous
    1 500g pack of red lentils
    A lot of spices and herbs
    Plain/self raising flour
    Breadcrumbs
    Honey
    Mustard powder
    Tabasco
    Stock cubes

    1 pack of six eggs
    2 blocks of cheese

    1 pack of courgettes
    1 pack of peppers
    Frozen peas/green beans/sweetcorn/spinach
    Half a bag of potatoes
    5-6 big onions

    Tins of beans and spaghetti
    2 tins of kidney beans
    4 tins of tomatoes
    1 tin of salmon
    2 tins of tuna
    1 tin of peaches
    2 tins of pineapple

    1 pack of six frozen cod
    2 bags of Quorn pieces

    Any ideas? I know I have a lot there and I want to utilise it the best I can. I always have milk, bread and whatever fresh fruit is on offer around (I have a young toddler and get Healthy Start for milk, fruit and veg.)

    I want to make enough meals to feed my husband and I lunch and dinner for at least two weeks (toddler gets a small amount of whatever we have.) I have a steamer, slow cooker and electric oven with hob. Thank you!

    There looks like you could do plenty of stir fry and mash meals using the rice and potatoes as a base. Spices and herbs would provide plenty of variety for these meals.

  • Dissect (Can't think of the proper word) the chicken, either before or after cooking....

    Sweet and sour chicken (Made with leftover chicken) See recipe below.
    Chicken breast wrapped in bacon
    BBQ Chicken legs. See Recipe Below.

    Fish Pie with Salmon, cod, breadcrumbs
    Tuna Bake
    Cheese and Tomato Quiche

    Meatballs in Tomato Sauce
    Cheese and Bacon Pasta

    Quorn Pie (Not sure as never used it but could you make similar to chicken pie?)

    Make upside down puddings with the pineapple and peaches. Warm the sauce and pour it over.

    Sweet and Sour Chicken

    Ingredients

    2 Chicken Breasts
    1 Red Pepper, thinly sliced
    10 Mange Tout, thinly sliced
    1 Carrot, thinly sliced

    For the Sauce

    2 tablespoons malt vinegar
    1 1/2 tablespoons sugar
    1/2 tablespoon tomato puree
    1 dessertspoon cornflour
    1 1/2 tablespoons soy sauce
    1/4 pint water
    One small can of chopped, drained pineapple
    Pineapple juice (drained from can)

    Method

    Slice the chicken into thin strips and gently cook in a little oil, once cooked add the vegetables to soften. Put to one side.
    Blend together the vinegar, sugar, tomato pur!e, cornflour, pineapple juice and soy sauce.
    Transfer the mixture to a pan, bring to the boil and simmer gently until the mixture thickens.
    Stir in the pineapple, pepper, mange tout, carrot and chicken.
    Serve with rice or a jacket potato.


    BBQ Chicken

    Ingredients

    Tin of tomatoes
    2tsp brown sauce
    2tsp honey
    50g butter
    1 Chopped onion

    Method

    Melt the butter, fry the onion until soft add all other ingredients except the chicken.

    Pour over the chicken and cook until chicken is tender and sauce absorbed.

    I have some chocolate chip muffins that have gone a bit hard. Can I use them to make anything?

  • a short spell in the microwave would freshen them up but eat them warm....dont let them go cold as they will be harder than before hth
