    Absolutely! Brown the chicken thighs skin side down, pop into a casserole dish, add the potatoes, passata, chopped peppers and onions. Add some chicken stock or a couple of stock cubes. Season with garlic, black pepper and mixed herbs or other herbs of your choice. Pop into the oven for a couple of hours, until the potatoes are cooked.....and there you have a chicken casserole! :)

    I'll add this to the store cupboard thread later.

    i was gonna suggest a chicken casarole aswell but i would bone the chicken first

    You could do the casserole and slice the potatos thinly and layer on top. Add some butter and seasonong and you end up with a crispy tasty topping to the dish.

    well,the month is going to last longer than the money !
    i know i've got a fullish freezer and some tins etc but am completely lacking inspiration! any ideas,i've put down what i usually make ( and am totally bored of! )

    mincex1 (usually spag bol or chilli)
    chicken mini filletsx2 (in breadcrumbs)
    fish filletx2 (steamed with veg and spuds)
    yorkshire pudsx2
    frozen peas,broccolli,sweetcorn
    6x little bags of mixed "micro-steam" veg
    cubed bacon bitsx2
    loads of rice and pasta
    baked beansx2
    1/2 bag of red lentils
    i bag pizza base mix
    fresh carrots
    fresh yellow pepper

    breakfasts and packed lunches sorted,cereal,toast,eggs/sandwiches,fruit and crisps.
    just fancy something "different" !!

  • what about meatloaf, or kofte kebabs with the mince? kedgeree with the fish and some rice and veggies - I like to poach an egg for the top rather than hard boiled egg.

  • Just about the cheapest meal ever - dhal and rice. You will need some sort of spice for the dhal:

    fry an onion with the spice
    Add lentils (red lentils won't need soaking overnight) and water
    Cook until done. Anything from a wet mess to a fluffy pease pottage consistency is acceptable. I like the fluffy thing to a medium thick mess.

    If you want to jazz up the meal a bit, fry another onion with some turmeric and any other spice that appeals, add rice, water and some frozen veg for a delicious pilau rice.

    Apologies that this might actually mean buying some onions and turmeric! :p
