Try Spanish Omelette - I made it the other day when I had loads of eggs to use! And you can add anything to it: peas, peppers, etc.

Hiya, I make a quiche without a pastry base, using eggs, fat free cottage cheese and anything else I choose to throw in it! 4 eggs, pot of cottage cheese as a quideline then anything else you fancy.
Dry fry onions, peppers and possibly bacon, mix cottage cheese and eggs in a bowl, then add everything else season to taste then place in oven proof dish for approx 25mins. I cant stand cottage cheese normally, but you really cant taste it in the quiche!!0 -
How about a layered thing .lightly boil a few spuds until soft enough to slice then slice thinly and layer up a casserole with potatoes, cheese, soft cooked onion,thin sliced red pepper and maybe chorizo.cook in a medium oven around 150c for half an hour then beat up a couple of eggs and pour over the top and return to the oven for 15 minutes till set and cooked .One pot meal with little washing up, serve with peas or beans as a side veg0

If it was me I would make an omelette with the eggs, cheese, chorizo and peppers and serve it with fried potatoes and baked beans. Oooooo could just eat that now !0

If the potatoes are already cooked then Corned Beef Hash is a goodie. It is basically a tin of corned beef, potatoes, and onions fried together into a big mush, and tastes scrumptious. That said, the Spanish Omelette idea is great.0
