Anyway I spent £11.63 on fruit and veg at the shop today (got bananas, apples, pears, potatoes, peppers, chillis, garlic, onions, cucumber and grapes) Takes my total spent to:
So £44.71 of £120 so far. Challenge ends on 15th May
Not even a week and half of it is gone!! Tomorrow I just need milk from tesco when I take my nanna. MUST NOT BUY ANYTHING.
Tomorrows meals then dinner prob packet pasta again and tea will be the chicken breasts wrapped in parma ham with new potatoes.
One thing I did do today is bake biscuits - we had run out of digestives and the kide like a biscuit at bedtime with their milk. REALLY easy recipe and they were so so scrummy.
Here it is in case anyone wants a go:
100g soft butter
100g caster sugar
200g self raising flour
1tsp golden syrup.
Cream butter and sugar. Add flour and syrup and mix to a soft dough (if it wont go into a dough add bit more syrup). Divide into 18 balls and space them on a baking tray. Flatten the top a little and bake at 190 degrees for 6-10 mins.
REALLY nice and way better than digestives. There is no way these are going to last long............. They taste a little like Foxs crinkle crunch.0 -

I'm feeling a little low as I now have around £10 to last me until next Sunday (1st month) i do have money to use, but I'm pretty sure I have enough food in the cupboard and meat in the freezer to last until. If I put up what i had, would anyone be kind enough to give me some ideas please? with a toddler I don't really have enough time to trawl through the menus and recipes!

Hi Rosie - of course not! Easter isn't going to make it easier either as we'll be home a lot more!!

portion of beef casserole done in sc that wasn't very nice, needs pimping up somehow!!
whole chicken
pack of bacon
one portion of mince (to make one meal)
2 chicken fillets
1 piece of frozen fish
4 tortilla wraps
frozen puff pastry
1 hm frozen curry (enough for 1)
6 pieces of chorizo
1 chicken & mush pie (for 1 - reduced!)
a few frozen chips
bag of peas
8 rolls (will need these for hubbies pack lunch next week)
few scoops of vanilla and another few scoops of strawberry coulis icecream

10 eggs (although I don't like omelettes, but love pancakes so maybe will have these a few times?!)

custard - ready made
1 creamed coconut sachet

1/2 small box stuffing

one meals worth of penne
Sorry about that! It feels like i have a lot but I'm struggling to see how it will last until next sunday....any help would be gratefully appreciated.

I know how you feel, I don't have a lot of time right now either as my three are all at home on Easter hols and trying to entertain them while working part time is hard work, so apologies for not being as helpful as I might normally, but this is what jumps out at me.
Whole chiken, see if you can stretch it. Make it for Sunday lunch then use the leftover to make at least one other main meal and the bones for soup. This thread has lots of ideas:
Rubber Chicken
Chicken fillets and thai paste into a curry?
Beef casserole meal+mince portion and lasagne sheets to make a lasagne?
Red pepper, onions etc combined to make a pasta bake or pizza topping?
Eggs, what about quiche, pasta carbonara? You'll find more ideas here.
Once you've had more suggestions I'll add your thread to the main storecupboard thread where you'll get lots of help and support from others in the same postition.

RAS - just 2 adults. My toddler has a little of what we are having or something else I cook up from what we have so she doesn't need counting in really.
Also just found a tin of tuna and a packet of couscous!
